Butchering Of Whole Lamb 

Thanks Very Much Benny! I successfully butchered my first two sheep today, following your video step by step. It went like a treat! I cooked 2 neck chops while I packed the rest. Never have I had such good lamb. I hung it for 10 days at 2-3 degreesC and it came out great. What makes this even more exciting is I did the lot with just one arm! You've now taught your first One Armed Home butcher! Now I can't boast your speed or consistency of cut thickness but I'm thrilled like a school kid. Thanks Again Benny!

Brings back a lot of memories. Its sucks how dangerous butchering is and how much of a thankless and underpaid job it is to the point where I am not pleased that waiters who make about the same as us, or more, feel they are tip worthy, but our profession is not. I gave up this career cause it had no future and my hands could only be sliced up so many times till I could not take it anymore.
