Ca Kho To - Eating Vietnamese Braised Catfish in Saigon

Along with numerous other delicious meals, when I was in Saigon, I had a chance to eat a Vietnamese food called ca kho to (cá kho tộ), which is a slice of catfish, braised in a mixture of soy sauce, fish sauce, and often some sugar to make it caramelized. Ca kho to is one of the many Vietnamese street food dishes that you’ll probably smell before you see. And one day as we were walking around the streets of Saigon, I got a whiff of that sweet goodness, and I had to stop everything we were doing to have lunch.
Along with serving ca kho to, this restaurant in Saigon was also serving a full menu of com binh dan dishes - which translate to commoner’s rice - and it’s basically a bunch of different pre-cooked dishes that are always served with rice. I really enjoyed eating com binh dan when I was in Saigon, and it’s about as much food as you can get for your money in Vietnam. So anyway, along with ordering one of the clay pots of braised catfish, we also chose a few different dishes from the pre-cooked assortment.
I started my meal with the ca kho to, which was extremely fragrant. Although the sauce was a little heavy on the oil, I would have to say it was extremely good and tasty. The fish was soft, yet not mushy, and had just soaked up all that flavor from the caramelization and from the light blend of spices included in the stew. Also I really liked how the ca kho to was cooked in a clay pot so it stayed hot throughout my entire meal. I reminded me of eating in South Korea, where numerous dishes are served in a stone earthenware bowl.
Along with the ca kho to, we also ordered some other, mostly meat heavy dishes. The fried pork was a little on the greasy side, but it was still tasty. But the grilled pork, was probably my favorite of the other dishes - it was just slightly sweet, and nicely smokey. We also ordered a simple vegetable soup, which included a vegetable that sort of tasted like spinach.
You will find Vietnamese street food restaurant exactly like this that serve ca kho to all over Saigon, but if you want to visit this same exact stall I went to, it was on Hem 39, in between Nguyen Dinh Chieu and Vo Van Tan roads. This entire meal, everything we ate cost 68,000 Vietnamese Dong ($3.14).

Lol!! Loved your vietnam videos mark! I was born in vietnam in 1968 and came to us in 75 my mom is vietnamese chinese and my father was in the war so i didn't know him. But your videos make my mouth water! I grew up eating everything vietnamese!! Thank you for bringing vietnam back to me.

I happened to stumble across one of your videos roughly a month ago, being a food enthusiast much like yourself and couldn't help but subscribe. Your approach and take on your journeys in search of the yummiest foods are fantastic. It's not very often where you see food commentary without some aspect of negativism but seeing someone portray their love for trying new foods with such enthusiasm is great. The camera work is always on point and everything looks so delicious, keep up the good work :)!

Im a vietnamese living in germany, and I love good food too! And Im so happy to see you enjoy vietnamese food that much, im getting hungry EVERYTIME! I wish I could do the same thing u just do.. travel and eat delicious dishes from different countries. I feel sad for a lot of people and friends in germany that arent that open minded to try new stuff because it doesnt look like the food they used to. Ill recommend ur videos in that cases. Those clay pots are sooo cute! In Colombia we use similar pots quite a bit to serve food as well. Everything looked amazing but my favorite part was definitely the kitty at the end. =D

`cmon guys!!! Mark is an excellent video maker. I never once thought his facial expressions meant anything but enjoyment of food. You guys are too focused on his reaction and expressions. OMG. I love the way you enjoy the food. These foods you ate are the most authentic in Vietnam. Inside the soup actually is crab, not meat, and Vietnamese eat it mostly in winter. Sorry about the guy without t shirt, it might be too hot lol.

My grandmother while living in Vietnam was very poor and would make this often to her kids. She still makes this dish to this day...she makes it so much that I like to think of it as her guilty pleasure or something XD

The soup is called canh cua mung toi rau day, the sliminess is from the veggies, rau day and mung toi (idk the english name lol) and the green part is a family of quash. The meat is actually ground whole mini crab!!

Some places top the ca kho with bits of fried pig cracklin. It's even more tasty. I was hoping you'd take a bite of chili with the next bite. Exactly how i feel when i bite into a thai chili after i try a food. Its the aroma of that pepper.... luv ur vids man

Oh Mark!!! Where are you now? You haven't left Vietnam yet? So great to see you enjoying one of our typical meals again. And if you're still there, I suggest you to try "bánh mì kem" which means "bread with ice cream inside". To describe precisely, it's not a regular type of bread, it's smaller and very soft, so they put 2-3 fresh balls of ice cream in it, and add in some peanuts (small size) and some cool strawbery syrup to make it more flavorful. But the hard part is that you won't be able to know exactly where they are because the sellers constantly move one place to another on the street carrying with them a mobile small car, so there's no fixed place (but in my experience, they often show up near the park). Anyway, the best thing you can do is to show the locals these following words and they might help you out: Bánh mì kem = kem ở trong bánh mì + đậu phộng + si rô dâu Hopefully you will have chance to try it :)

It looks really wonderful Mark. I normally don't like cat fish because of the earthy and very fish flavor but how different is it from ;like a channel cat fish???? I would truly like to try it. The pork with mustard greens looks great as well. Your can never go wrong with grilled pork. Your did a wonderful job Mark as always, truly like how you explain the flavors and textures. Hey Mark, I'm heading to Hanoi soon and I'm wondering, is the food there similar to Saigon or is there a vast difference? Could I find similar dishes to the ones you've sampled here?

You can find the same dishes in hanoi. But I think the flavor wont be the same cuz every part of vn has there own culture. Thats why the flavor for food is much more different between hanoi and saigon

Street food in hanoi is sooooo much better. Believe the girl who has lived long enough in both cities ! :)
