Cacio e Pepe recipe
Ingredients
- 100g spaghetti
- 0.5 tablespoon fresh ground black pepper
- 85g pecorino cheese, grated
- salt
Method
1. Bring a pot of salted water to a boil. Add spaghetti and cook, stirring occasionally, until about 2 minutes before tender.
2. Meanwhile, in a large pan on medium heat add the pepper and swirl your pan until it’s toasted, about 1 minute.
3. Add about a quarter of a cup of the boiling pasta water to the pecorino cheese in a small bowl and stir.
4. Next add around 1 cup of the pasta water to the toasted pepper before adding the cooked spaghetti. Add another ladle of the pasta water, and over a medium heat, continue to cook the spaghetti by tossing it in the frypan.
5. Next, turn the heat off and wait 1 minute, tossing the spaghetti again before adding the now semi-melted pecorino cheese to the pan.
6. This is the tricky part. You need to emulsify the pecorino cheese into the pasta water in the pan. As long as you continue to move the cheese and don't add any more heat to it you should be fine. If you feel the pan is getting too dry, don't be afraid to add a little more hot water and continue to toss.
7. Simply serve your Cacio e Pepe with a little more grated pecorino on the top. Enjoy!

@@drewpfeif5028 possibly but I don't think he claimed it to be traditional. And in fact even the most famous dishes have variations within relatively close geography. I saw a documentary with Heston looking at the origin of spaghetti bologese which showed as much. You're correct nonetheless.

@@drewpfeif5028 I'm not even Italian nor make much pasta, but we can see that the cheese clumped up due to too hot pasta water added to it too fast, the fat split apart and it never recovered. I seriously hope Andy remakes this dish, he seems like a guy with skills and integrity.

Pasta Chemistry Tip: the proteins in Parmesan cheese are kept from seizing up in part from the starch’s in the pasta water. While fresh and bronze extruded release plenty of starch into the pasta water for this to happen, smooth pasta, common to the US, doesn’t release near that amount. As a result it can be difficult to prevent cheese clumping. The solution to this is easy, just add a bit of cornstarch to the pasta water before you boil it. This will really help in keeping the cheese sauce smooth and silky. Also, to make things easy, just cut off the amount of parm you want to use, cut into small chunks and pop it into a blender. This will turn the parm to a fine crumble and make for easy uniform melting.

If you want to prevent the sauce to break in your pan: Blitz the cheese (Pecorino Romano, not Grana Padano/Parmesan), pepper and some pasta water in a mixer first, and then add it to the hot pasta in a warm bowl (instead of a hot pan). Works like a charm every time!

@@andrewbrown5300 Cacio e pepe is traditionally made with a long spaghetti type pasta, ideally it’s a square shape (tonearelli) cut from a sheet to about twice the thickness of spaghetti. I’ve made it with both, and also with rigatoni and have found a long pasta to be best when mixing to create the sauce. It’s my favorite meatless Monday dish.

@@Notiravgsarah yup, that’s the traditional way. I have made it with chickpea rotini for the added protein (19g per serving) on a meatless Monday. It’s good (and healthy) , but it’s definitely not the same.

When the spaghetti is boiled in a shallow pan the water has more starch since it’s not as diluted, so it’s perfect for this dish which is dependent on starchy water. I have made it as a one pot by first toasting the cracked pepper, then adding boiling water and salt plus the pasta to cook. Once it’s cooked to short of Al dente I remove some of the water and proceed to add grated cheese to make the paste. I may add more pepper and if necessary make more sauce by mixing more grated cheese with some of the reserved pasta water and adding it to the pan. It usually blends well without breaking.. result is delicious.

I just made this a few weeks ago, and found that if you use the finest grating side for the cheese, it won't clump like that. That's the first time I was able to get the cheese to be creamy, not clumpy. Great job Andy, the toasting of the peppercorns and adding the pasta water to them is key!!!

timing on the 'blooming' of the pepper is crucial. If not ready to drop pasta water at the right time, you could macing the entire kitchen. (i've done it several times)

i find that adding butter or whole milk helps thicken the sauce and makes the texture immaculate. i end up using 1/2 to a whole stick of butter and easily 200g of cheese. the butter or milk helps the cheese bind and makes it fuckin delicious
