Friends, I want to offer you a simple option for making the Napoleon cake. This is not a classic "Napoleon" with flaky cakes, here are biscuit cakes with cottage cheese and custard. The cakes are thicker than in the classic version of this cake, but believe me, they are very tasty. The cake tastes like classic Soviet cakes. The diameter of the cake is 21-22 cm. So let's start!

Ingredients for the cakes:
- cottage cheese 9% (300 gr)
- sugar (225 gr)
- eggs (165 gr) about 3 pcs C1, but it is better to weigh
- wheat flour (210-230 gr)
- baking soda (4 g or ¾ tsp)
- flour for rolling cakes
Rub the cottage cheese through a sieve.
[Note: You can use soft curd, but the dough will be softer. In this case, I do not recommend adding flour, you can simply spread the dough with a spoon.]
Mix eggs with sugar. Add the grated cottage cheese. Let's mix. Add flour and baking soda. Mix well, cover with cling film, refrigerate for 12 hours. It is best to prepare the dough in the evening and refrigerate overnight.
After 12 hours, we take the dough out of the refrigerator, divide it into 6 parts and roll out the first cake on baking paper. I drew circles with a diameter of 24 cm in advance on baking paper. I use the trimmings for sprinkling the cake. I turn the paper over so that the pencil is not drawn onto the dough. We put the cake in a preheated oven up to 200 degrees. Bake until slightly golden, about 10-12 minutes. Be careful! Do not overdry the cakes, otherwise the cake will dry out. If, nevertheless, you dry the cakes, then boil the syrup (20 g of sugar, 200 g of water) to soak the cakes. Thus, we bake all 6 cakes.
We immediately cut the finished cake with a ring of the required diameter. I have 21 cm. You can use a plate and a knife instead of a ring. We put the cuttings from the cake in a separate plate, they will be useful to us for sprinkling the cake.
Ingredients for the cream:
- milk (600 gr)
- sugar (200 gr)
- eggs (110 gr)
- flour (50 gr)
- vanilla or vanilla extract
- butter (200 gr) at room temperature
Boil milk (500 gr) with sugar. Grind eggs with milk and flour. If you get lumps, rub through a sieve. As soon as the milk boils, we begin to pour it in a thin stream into the egg mixture, stirring in parallel with a whisk so that the eggs do not curl. We return the mixture to the stove. Cook until tender, stirring constantly. After boiling the cream, it is recommended to strain it through a sieve. There are always lumps of curdled eggs =)
HOW TO BREW COOKED CREAM?
Rule 1: Many people think that the custard is done when the mixture thickens on the stove. And turn off the heating. But this is not the case. At first the mixture will be liquid, then it will thicken, then it will become liquid and glossy again. You need to achieve just such a state. Now the cream is ready! Otherwise, the cream may clip off and leak in the refrigerator.
Rule 2. The custard must be quickly cooled, otherwise pathogenic microflora begin to multiply in it. Someone covers the contact with a film and puts the hot cream in the refrigerator. But I feel sorry for the refrigerator! I cool the cream in a cold water bath.
So, cool the cream in a cold water bath. Add ice to water periodically. The cream must be cooled to the temperature of butter. Beat the custard for 5 minutes until smooth. Then add butter in parts. Beat well each time. Add vanillin.
We start assembling the cake. You can collect the cake without a ring. But I like everything to be smooth! I put the ring with acetate foil so that the cake does not come into contact with the metal. We collect in the following sequence: cake, cream, cake, cream and so on until the end. Leave some leveling cream. If the cakes are overdried, soak them with syrup (20 grams of sugar, 200 grams of water). Leave the cake at room temperature for 3-4 hours to soak. Then refrigerate for 5-6 hours to stabilize.
Cover the cake with the remaining cream and smooth out the top layer. Decorate the top of the cake with a waffle paper Tiger picture. From the scraps of the cakes, make a crumb and sprinkle it on the top and sides of the cake.
