The Saint Honore 'cake certainly needs no introduction, it is a typical French dessert that takes its name from the patron saint of pastry chefs, Bishop of Amiens. Majestic and elegant, it is an ideal cake for important occasions. I have always been fascinated by this dessert with a slightly baroque appearance, and also a little scared for its complexity but this year on the occasion of my birthday I rolled up my sleeves and fastened my apron and I wanted to try it. . The Saint Honere 'cake, at least my version, is made up of two layers of sponge cake and one of puff pastry, filled with Chiboust cream. It is entirely covered with a thin layer of whipped cream and topped with a crown of caramelized and cream-filled beignets. The decoration of the tufts of whipped cream, diplomatic coffee cream and the covering of the edge with crumbs of sponge cake and puff pastry complete the decoration. In short, a masterpiece of dessert for important occasions.
