In this video I demonstrate #woodstovecooking by baking biscuits. Usually people think they need a #castiron #dutchoven to bake but I've developed a method for baking on top of a #woodstove.
Follow me on Instagram: Over_On_the_Wild_Side
Traditional biscuits recipe:
Ingredients:
2 cups flour
1 tbsp sugar
3 tsp baking powder
1 tsp salt
1/2 cup shortening
1 cup milk
Directions:
Mix flour, sugar, baking powder, and salt in a mixing bowl. Add the shortening and mix in so the mixture looks like small clumps. Then add the milk and stir together. Use a hand blender to mix all the ingredients together. Drop the dough on a greased baking sheet and bake at 450 degrees F for 10 minutes or until golden brown. Yields about 12 biscuits.
My recipe:
Half a container full of whole wheat flour. Unless it's a big container, then half is probably too much. Don't use a bucket for example. If your container is too small you'll still need to only do half so you have enough room for mixing. But if your cup is too small you won't have much food.
Then add some baking powder. A palms worth.
Some salt, enough to fill a thimble. If you don't have a thimble look at the end of your finger where the thimble would go and imagine it filling that and then add about that much salt.
Mix these but don't overmix.
Next push the flour back to make a hole for pouring in the olive oil. Don't add too much or too little. Then cut it in.
Then add some water, again not too much or too little.
Mix it all but don't overmix. Put the dough into your pan and cook it.

Looks real good to me young fella, you done good. After making a few thousand of them myself, I would like to throw some suggestions at you. First, water is okay, but there is something about milk that makes them better. So, add 4 TBLSPs of dehydrated 1% milk powder to the mix. Secondly use lard and only lard, and there is a reason why. So now I would like to thrown my mom's recipe at ya, (My Grandma's too). Okay? This is for one person: 4 biscuits. 1 cup flour, 2 teaspoons baking powder, 1/2 teaspoon salt, 1/2 tablespoon sugar, 4 tablespoons milk powder. Secret to good raising is to mix these dry ingredients a throughly as you can. Get it mixed. Then, work in the lard and whisk it until it is absolutely on all the flour. I like to use a whisk for this. Now here's the good news. You can mix this dry mix up in larger quantities , say a quart size container and because of the lard and not oil, it will not go rancid for a long, long time. Pour out what you need and mix in the water until it's proper sticky. Nothing to it. I keep a jar on hand so when company drops in I can have biscuits out of the oven quicker than a frozen pizza. Hope this help. I also use this same mix for fry bread like you done. P.S. I am absolutely enjoying the videos, thanks for you time and trouble.

so cool! curious... is olive oil that much more shelf stable than butter? Just thought it was funny that you went to the effort to swap out butter for olive oil... then put a big pat of butter on top :-D
@OverOnTheWildSide
@OverOnTheWildSide 3 года назад
Haha! Yeah at home my lifestyle is different from my camping lifestyle. I won’t carry butter with me. I also made the switch to olive oil because I thought it was healthier. There’s a way of making butter into ghee that gives it a really long shelf life. I found that out after making the switch also.
