Hey Folks, today we’re going to look at how well the Char-Griller Gravity 980 cooker can grill a steak, specifically a ribeye. Traditionally gravity smokers are one trick ponies, being incredibly consistent when it comes to smoking meats but not really having the ability to hit high temperatures to grill meat. However, the Char-Griller gravity says it can get up to 700 degrees to sear, we’re not aiming to be quite that hot today but we certainly are going to put it through its paces.

Ingredients :
1 16 ounce ribeye steak
2 Tbsp kosmos texas beef rub
2 Tbsp kosmos cow cover rub
1 Tbsp kosmos SPG
½ bottle kosmos brisket mop
8 ounces water
Recipe:
Remove steak from packaging and place into a ziplock bag
Add the brisket mop and water to the bag
Squeeze all the air out, seal the back, and place it into the refrigerator for 1 hour
Bring the Gravity 980 up to 550 degrees
After an hour remove the steak from the bag and pat it dry
Evenly apply all three rubs to the steak
Place the steak on the grill turning it every two minutes until the desired medium rare internal temperature is reached (125 to 130)
Briefly let rest and serve
