THIS IS NOT RECOMMENDED TO DO BUT I'M A REBEL CANNER DO AS YOU WISH BUT THIS IS WHAT I DO I CAN MANY THINGS THAT ARE NOT RECOMMENDED ...Totally new to me but I made this video to see the outcome for myself and these turned out great! I have seen on many sites that this can last 2 years it might last longer but I have not seen evidence of it.

Thanks for the video. You can make egg-less cakes and this extends the life of the cake. Also, Bourbon and cinnamon base recipes spices extend the life of the cakes. I personally like banana bread, spice cake, angel food, egg-less cakes.... Cookies can be made on a sheet.. use hot jars from the oven and sprinkle coco and powdered sugar between to keep them from sticking together, You can also do sugar cookies and sprinkle confectionery sugar with lemon extract.. Put the hot lids on and rim and wait for the seal to happen. I also learned if you can get the cake about 1/4 inch from the top they last longer. Too much of a gap seems to make them spoil faster. I also like coconut oil to spray inside the jars. Coconut oil is anti bacterial and can help. Hope this helps guys....keep learning and keep canning.

I've made pimpkin, zucinni and cranberry/orange bread in jars for many years. It's awesome, easy and keeps well for at least 2 years.

When I was in the Army in 1965-1968, one of the mysterious things (to me) that we had in our C-Rations was bread in a can. It was fresh, tasty, and the can was dated 1947! The bread was even browned! I love to can and have always wondered how they could preserve bread for 20 years like that? The most amazing thing to me was, it was very nicely browned on top and sides. It had a light weight corrugated paper around it and a sheet of what looked like parchment on the bottom. The paper was sort of stuck to the little loaf, but not so tightly that when you pulled it off, the crust was damaged. The only thing I can figure out as to how they made it was, they baked the little loaf in a form, then wrapped it in the paper, stuffed it into the can, cold sealed the can then steamed it to safety heat in a pressure steamer for 20 minutes or so. I have never tried baking any bread product in the jar, then sealing the hot jar after it came out of the oven- But, practically thinking about it- I can not imagine it would have any safety issues and once the jar was sealed hot (probably cooled down to about 250 deg F or so, there is nothing that could survive that that could cause it to spoil. Thanks for your nice video. You have given me encouragement to also experiment with my own ideas on canning bakery products. I've been canning for more than 30 years and have never tried it! Something new and challenging....YaY!

I bet greasing the corn bread jars with bacon grease would be fabulous! I think I'm going to try that soon.

thank you for the reference to Rebel Canning! I had never heard of it so I went over right away and joined! And you answered the only question I had which was, how long can these sit on the shelf! So happy to know I can get meals and dessert and snacks ready before winter takes away my usefulness and strength!

That's a good idea because this will kill people! I use unapproved methods every now and then like for bacon but I would never make a cake in a jar! Number one there are too many nooks and crannies for botulism and it's not canned in water. You can make a canning jar have a seal with any type of heat but it doesn't mean it's safe! The glass is not tempered either so when you go to use that jar again if it hasn't already shattered it's going to shatter in the canner! I'm a food scientist and every time I see these things and people saying well we're not for mainstream we're rebels is no excuse for endangering the lives of their children themselves and anyone they know. Stock up on your flower and sugar and baking powder and baking soda and when you want to cake make one slice it and freeze it but don't ever do this!!

I did this with banana bread and banana chocolate peanut butter brownies. I had lots of frozen bananas from my smoothie days trying to get healthy before learning smoothies has just as much sugar. But I didn't want to waste the bananas. The banana bread came out perfectly in quart jars and I even had to chop off the top that came up too high and it was like a muffin top. They both sealed. But my brownies where in pints and I tried to cheat it because I knew it wasn't going to rise so I put more batter in each jar but I didn't consider because it was so much and so many in one convection oven I should have cooked them longer and take the time to tooth pick check the middle no matter what. They sealed half baked but i went to check after a day and scooped them all out into a freezer Ziploc and pressed it like frozen ground beef and they are still the best brownies I ever had even though they are now some other type of half baked frozen creation that I slice out a piece like aged bacon lol. It looks like pure fudge slices. This is how I will be making brownies from now on. Not complaining but anyone who tries this remember aways continue to do the testing for doneness. No matter who is rushing you to do something else. I rather leave them in a little longer than not long enough. I love this idea!!! Can't wait to try this for Christmas gifting! If you put your canning funnel over the top of your jar before you spray it, this might save the rim of jar from getting oil on it. Easier to clean the top of the jar. Thanks for sharing.

I have done this only with regular size cake mixes. A cake mix will do 4 or 5 jars. I also did brownie mix. I did choc fudge cake, yellow cake, choc cake, and butter cake. All turned out and the choc fudge cake is so moist. You really have to be careful because each jar is more than just a slice of cake. It is a fourth of a cake. I will try corn bread next.

eating out at restaurants and letting angry and apathetic people handle your food is a bigger risk than the risk of bacteria in the chance foiled canning. At any rate, jars seem to be a better way to freeze breads if you don't want to shelf store.

I tried it in squatty half pints and I had to reprocess a couple to get them sealed (even though rims were wiped with vinegar paper towel...I opened and wiped them again..reheated the jarred cakes for 20 minutes...removed from oven and resealed with lids and rings. Someone said they wouldn't last more than 6 weeks...so I ate some each week and they were still perfect up to six weeks at which time they were gone. Perfect to put some whipped cream or icecream ion top for a dessert. I will experiment further soon. I thought maybe the squatty jars would be hard to clean but a spoon gets those corners and nobody left even a morsel! Made my chocolate brownie cake same recipe. No signs of spoilage (6 weeks). The double processed ones were not burnt and a tad bit drier but not noticeable with ice cream or whipped cream.

I have Canned for many years I’m 72 but I never tried baking cakes in a jar that’s amazing you’re right about having the oil on the ram your lids will not seal. I was thinking maybe if youPut the ring on the jar before you sprayed it it would not get on the rim of the jar. Take the ring off then fill the jar if it’s on the ring the oil you can wash it. That might help Lord bless you

What was the oldest cake in a jar you opened to find it still good ? I can mild cheddar cheese and cream cheese (pressure can it , always as it is a protein and so it meat so can like you can meat) opened one from 2012 and it was perfectly fresh . Note , you must can in a jar no bigger than a half pint it has to do with density and staying fresh . Blessing's , Linda

In the past I have canned cornbread, banana bread and pumpkin orange bread. The cornbread did not keep but a few weeks but I just recently opened the banana and pumpkins from 2016 (now 2021) and was 😋 delicious. I think the trick was that I had added acid to them with orange juice. Recently (again)I have made cornbread but I added Fruit Fresh and some ketchup to the mix. I have a friend that makes the most awesome hush puppies with her fish and uses onion and ketchup in the recipe so that's where I got the idea. I also made some Hawaiian yeast bread (with pineapple juice) in cans. Pineapple being the acid of course. I will have to get back in a year or so and let you how the experiment went.

I don't know how they did it but in the 70's we used to eat sea ration pound cake. canned during ww1. so it can be done. of knowing the army it was made of all preservatives, or sprinkled with agent orange. but it was tasty.

lol. Love your post. We stole a K ration poundcake from the mess tent in Desert Storm. Cooks were always hoarding back a few of those and we raided their stash.

OMG. I tried canning a FRESH PEACH CAKE, but unfortunately they really did not turn out the way I had hoped. I think there was too much moisture. So seeing all that you canned, I am confident that my next batches will be much better. Lesson learned, do not use the fruits. Thank you so very much for giving me another canning site to join and thank you so very much for actually showing me what to do!

Many Thanks. I did a trial last night not using the fruit, but using just the jello. The cake was still too moist. So today I will be trying the jiffy cake with no added stuff :) Thanks again!

as jiffy is such a small batch I use full size boxes of cake mix , or make my own .. comes out great ,,, banana bread is awesome in jars

I still have to do some of these & some jelly jars of chili, soups & stew (winter stash in my work locker.) Homemade meals when stranded at work during a snow storm will make my life happier.

@@vickylange3698 Most of my locker meals are meat based, so pints & half pints are processed 75min in pressure canner. I do basic soups, stews, meat for sandwiches & odd items like bread/biscuits. Chicken pot pie filling is my favorite, since it can go on noodles, rice or toast.

Instant rice, quick cook noodles etc can be vacuum sealed in portions & stored with my meals. For meals, use what you have on hand (odds n ends of veggies, leftover meat, etc). Freeze those & plan small batch canning day ..

Anna at Four Day Homestead vacuum Sealed cooked not needing refrigerated. How can I get vacuum seal for shelf stored food . I know they have in stores but would be interested in purchasing vacuum system If you tell me what I need or even have iTubes? What about cold packing meats ?

I have been cannng dfferent knds of breads & the family secret X-Mas Pudding wth my Mom, since I was 15 so this year will be 46 years of cannng & I am stll here. My Mom will be 97 next week & I stll have a time keepng up wth her. A Couple years back I canned Bananas & used them to make bread & puddng. They turn pink when they are canned. I have always used the water bath canner for the max time of three hours wth the jars flled half full. I just did 32 jars last weekend and they came out perfect.

With the yellow cake mix, I would like to add berries or fresh berry syrup to the mix, perhaps layering, would you then water bath can them, or not make any adjustments. I'm thinking of making these for my husband's breakfasts.

Just need to clarify the sealing with lid. Did you say in a comment, that when you took them out of oven, you immediately added the lids and they sealed. You don't have to water bath or pressure cook to seal the jars. Please let me know if this is correct, if wrong please give me correct steps. Thank you. Can't wait to try.

The heat will seal them. No need for any extra steps. Remember, always be sure to wipe the rim of the jar BEFORE you place your lids or else they won't seal properly. Happy baking!

Do these hold well in storage? I like the fudge in the 2 jars. That way a scoop of ice cream and hot fudge poured over right in the jar.... YUM!

you don't need to....just clean edge immediately and put dry, sterile lids onto jar with ring...you will hear the ping in just a few minutes...this is how I can my tomato sauce, as well.... fill quart wide mouth jar, place in microwave for 4 minutes, bring out and place lid and ring on top....pings by itself and you're done....anything high in acid, most fruits, etc., and baked goods.... other low acid food will need a canner, either water bath or pressure cooker....meat MUST be canned under pressure.

Has anyone reported how these keep? It would be interesting to hear how they hold up towards the end of that two years. VERY interesting bc if they hold up well, these would be a literal Godsend, indeed, during times of food scarcity/economic chaos. Thanks you so much for sharing! 🙏🏻❤️

of course, this was the original way to do it...make your favorite cake/bread recipe and you'll get a half dozen plus the serving you'll save for 'today.'

As the cake cools, and is covered for sealing, does condensation begin on the inside of jar, and if so, does that make the cake gooey or different consistency when it is finally opened, or would mold form? I am new to canning, but excited to begin this type of venture, also :-)

All the canning sites say don't trust canned cakes and breads done this way..I water bath canned, for 90 minutes with seals on, cinnamon rolls with syrup. They look great but now I am afraid to eat them. Apparently low acidity and water content. Lol. What do you ladies suggest? I have lemon juice in the dough and there's plenty of sugar. Also ground flax to act as preservative.

Does this oven temperature ruin the jars for later use? I understand that they are only good to use at 200 degrees. Also, do these have to be refrigerated after baked because they are not pressure sealed, or are they pantry safe? I am new at this and appreciate all of the info you can give me as far as safety. Thanks so much.

Perfectly safe. I've been doing this for over 40 yrs. Never broke a jar, never had a seal fail. Taken out of the oven one at a time, the jar will seal on its own as it cools. Doesn't need to be cake. I've done pumpkin bread, banana bread, zucinni bread, cranberry bread. All good for at least a year.

BUTTER your jars....... 2 years later, I use a canning funnel and butter flavor spray, works great, keeps the grease off the jar edge

Did you process the cakes in the canner after it was baked in the oven, or will the lids seal securely after removing the jars from the oven? did you ever try skipping the oven baking, and just cook them in the canner?

If you tried cookies, I wonder if you could put parchment paper layers to make actual cookies instead of a cookie log? I’d probably be tempted to do cookies in really small jars and then add like a cheesecake topping. Individual desserts.

The jars are filled, baked and super hot, right out of the oven (one at a time) to be capped with a hot lid ( put lids in dry pan and into oven the last 10-15 min. of baking). Pull out a jar and lid, quickly clean jar rim, lid and band hand tight. Set finished hot jar aside on towel to cool, you will hear 'ping' of lid sealing as jars cool. I pull out only one jar at a time because I want that jar hot as possible as I cap. That insures sterile contents.

How long will that last with that moisture in there without going rancid? I would love to try it. Did you find it to be soggy when you opened one or have you not opened one and tried it yet?

It was not soggy at all and yes a few of my jars had a bit of condensation in them but they dried out in the oven for us they last 2 years I have never had mold or spoilage

@@Monkchip .there a you tube video that does them?name?but u can look it up. The only thing the video did diff from this one was to use pineapple juice in place of water in your yellow cake mix. Then put a pineaplle ring in bottom of jar and cherry iniddle.then pour your cake mix in...a little under 1/3 full.... You probably figured it out by now.but i am new to this and watched a video earlier today on pineapple upside down cakes.
