Good to know! Well explained. I think I keep drying any apples I can get, multi use and they take up less jars and space.

So if you decide to use apple juice do you just dump the apple juice in the pot and let it warm up to a boil

There are recipes for that, but we find larger pieces are a nicer texture (generally speaking; this depends on the type of apple you use) and better for eating all by themselves.

I just canned some Spartans today. I was horrified when the 20 minutes was up and I opened the canner lid. All the jars were floating!! I thought they had all broken, but they were fine. I did blanch them so am wondering if it was maybe the variety, or I did something else wrong. I am paranoid now to eat them. I think I lost some liquid in the process but they are too hot to tell right now. Hoping you can help : )

The food isn't safe if the jars were floating in the canner. Perhaps you didn't pack the fruit tightly in the jars? Fruit has a lot of air in it, so you do need to pack tightly.
