#JARITUPJANUARY Ok I’ve done , quart bean soup, quart kidney beans, pint bbq beans, quart pinto and ham, pint blk beans, two cases of quart chicken, one quart case of beef, 1 case venison and 4 pints of salmon. Oh yes a a case of mixed berry jelly 😱 ALL IN JANUARY

I find it easier to put my pot on the stove with the solids and add water a gallon at a time. At 8 pounds a gallon, water is heavy and as we get older, it’s harder to lift. Just a thought for those without the hired muscle.

I love black eyed peas! Ham stock is the silver bullet for so many southern and Cajun dishes. Can't get your homemade gumbo quite as rich and delicious as your favorite resteraunt, no matter how dark you get the roux? Ham stock baby.

I love Black Eyed Peas with Ham Hock. I am the only one out of the five of us that will eat them though. I want to can me some up in pint jars. Thanks Heather for sharing them with us. God Bless Y'all. Huggggs

I definitely could drink that broth! I would crack open one of those jars and eat it as a soup. I had canned a butter bean soup similar to this with ham hock broth and meat and just added a bit of carrots and celery, it was divine. Lovely job Heather!

​@@carriem7832 Butterbeans are the same as lima beans. In the south, we call the green ones limas, and the cream or speckled butterbeans.

Displaced is the word you are looking for. The mass of the jars displace the water rising the level.

love your video. as i type this i have your recipe in my caner going right now. the only change i made was omitting the kale and adding a few dashes of cayenne pepper to my stock. i let that cook over night and when i got home from work this afternoon i went at it. right now my only down side is my caner will only do 8 pint or 7 qt. at a time. so i had to put the rest of my peas back in the fridge until tomorrow. i so need a double stack caner. cant wait to try em. thanks for sharing

I learned to cover my jars with a towel when they come out, especially if it's cold out. (It also gets the water off the lids which drives me crazy!!)

Some don't recommend covering pressure canned jars fresh out of the canner.

Nice rich broth ~ I bet the house smelled amazing! We have the wood stove going and I swear I could smell ham, ha ha. I've been saving my onion peels, peelings from carrots and celery ends in a bag in the freezer to make vegetable stock. I would have put all that in the compost or trash bin. Learning so much from people that pressure can. Going to miss jaritupjanuary but you all have given me lots of foods ideas to can. Thank you so much! 👍

Hey Heather 😊 Wow and wow .. I have really enjoyed all the videos on canning . Wow I learned a lot .. and that Black Eyed Peas with yummy stock looks super delicious.. perfect for your cold weather with a pan of cornbread.. and guess what your recipe on salsa came out super .. I did it 🤗🤗🤗🤗🤗🤗🤗 With your help .. also the grape jello came out super .. now going to try out the apple pie filling from the amish book I just got... we have apples trees ... thanks sooooooo much Heather.. for all the canning classes .. I hope your smiling because you help me out a lot .. and I’m having fun .. next I ‘ll be trying slowly how to make bone broth. Or chicken broth .. Just an idea you can always cook greens(collard, kale etc) with the broth of the black eye beans, yummy!

Hi, Heather. You also can try to use the ham hog and the stock to make Spanish Yellow rice with the black eye peas or the pinto beans form before. It's very easy. Some onions, pepers. cilantro , garlic, chopped small. Sauté in oil together wirh some paprika, tomato sauce. salt and pepper. Add beans and rice. Add your stock. Let the stock dry. mix, cover and let the rice cook. Enjoy.

Hi Heather.enjoying this collaboration you are doing with others is so interesting, inspiring and helps us learn what pertains to each one of us in the ways we can use. You are amazing . I do a lot of different beans with smoked ham hocks, but I make it for family, everyone gets some, but I do not can. Just tomatoes, from our garden, peppers, sauce for spaghetti and some fruits is all I can. This was very nice Heather thank you.

I always save the juice (gelatin) that cooks off a ham and put it in the free. I usually cook with it but this time I will can either black eyed peas or great northern beans with it.

Made my stock yesterday using 2 ham bones saved for beans, to bad we don’t have smell vision, smelled so good we wanted to just eat for a vegetable soup. Will be canning my peas today. Thank you so much for another idea.

Please can you do a video next time you open one of these to show us what it looks like and how you use it? Iv never even heard of black eyed peas iv only ever cooked gammon once and that was in Coke the roasted with black treacle and mustard powder 😂I'm new to Canning but I never seen most of your dishes you can in the UK so would love to see how you make meals with them!

btw,,,, you can get the inside of the canner clean and bright again by boiling Cream of Tartar in the water. Till with water to above the stain lines and add a tablespoon or two of Cream of tartar. (I can get a 15oz? jar of Cream of Tartar for $6 local). It make it so nice again. This recipe looks gorgeous and I can almost smell the smoked hamhocks.

Please make a cook book for all your can goods. 🧐 To help use make good home cooked meals but also to help young parents. I wish I knew this when my kids were little.

We don't eat many beans but I really want to try this! I'm finally going to get my canners( water and pressure) by next month or beginning of March I'll be ready to start!! So very excited to get started on my journey!

OMGosh, Heather...my mouth is drooling. I love black-eyed peas and I love ham hocks. As a matter of fact, I had three lovely smoked ham hocks simmering on my stove all afternoon today (Jan. 24th) I like to boil the hocks separately then add them and their broth to beans--or black-eyed peas--in a big pot and simmer that for a few more hours while savoring the fragrance of that combination for the rest of the day. Yum yum. Thanks for sharing your recipe for ham hock broth. I've never canned beans but you make it seem so simple and easy...so, they're on my 'can-do' list this year. :-D

Was told vent for 10 minutes then put weight on bring to 10 pounds pressure and can for whatever time is called for. Did this stuff as a kid and just now getting back into it as a senior citizen. So any helpful tips are welcome. I hate black eyed peas after sitting and shelling them all the time. But this one sounds really good.

Yes. Whenever I make a stock I always put it in the fridge at least overnight just so I can skim the fat off more thoroughly

Boy do those look good! My family is from the south and we grew up eating pinto beans which we called “soup beans” . We had them 2-3 (probably more) times a month, my point is I love beans! Any type of dry bean except for black eye peas! The only reason is that it was not a bean my mom made and the first time I had them was from a home style restaurant in the Smokey Mts. They had burned the whole pot and all I could taste was the burnt taste. They were awful, when I asked the waitress about them she said the cook had burned them but was hoping they didn’t taste to bad😖. So every time I think about trying them that is what I think of😜. Do you serve them as a side dish as well as in soups and casseroles? I really want to like them😏

We have replaced a lot of meat here with beans. They are very healthy for you and they reduce certain kinds of cancers. 😁👍🏻 I throw beans in everything. Last night I threw a jar of black beans in my taco meat. But we eat them as sides and as in main dishes. 😂 beaninstitute.com/beans-cancer/

OHHH MYYYY Heather.. You totally ROCK... I didn't know you did the "Organic" deal... We do as well.. We actually make as much as we can from scratch, and I mean everything, from saltine crackers to homemade shampoo's, and body wash.... This is looks amazing.. We live in a pretty rural area so finding organic is pretty difficult but when I can I use it! Or local farm fresh products. ☺️

So, 1 cup soaked. 1/2 cup dry.

1/2 cup dry for pints and 1 cup dry for quarts. If you used soaked beans you can fill the jars. I chose not to because i wanted more broth.

Girl, I was up til 3am! I shut it off and Matt turned it back on low when he got up at 6am. 😂 i shut it off later that morning so it could cool a bit so I didnt burn myself when straining it. But still warm enough to can it up. It was a LONG 24 hours!

YUM! That stock looks so good and as you said, so may ideas for meal options! I do 4-6 week meal planning and this one is going on the list for February with a canning session this week. The stock in split pea soup (one of my fav soups) is brilliant! Is 9:30 in the morning too early to be craving ham stock? hahahaha

Can you add more than 1 cup of beans to a quart jar? That just looks like that wouldn't be enough peas for me. Hope you are progressing well. We could sure use an update if you feel like it.

Two questions…. Do you skim off any of the excess the fat that sits at the top of the stock? Also do you wipe the top of the jars with vinegar before screwing lids on?

90 min for quarts. 75 for pints. My black eyed peas were dried not fresh so dried peas get process the same as dried beans. ☺️
