There is nothing as satisfying as looking into your pantry and seeing it well stocked with home canned food.
When you can it yourself you can control the ingredients and cook to the preferences of your family.
Some of the simplest canning brings the most satisfaction and properly canned can be used for a variety of recipes.
In this video I cut up, skin and bone, chicken thighs that I bought on sale and froze until I had a day to can them. I packed the meat into fresh pint jars, added a half teaspoon of salt and then put them in my Nesco small batch canner. To the canner I added 4 cups of water to build pressure necessary to reach 15 pounds.
I'm not sure what I was thinking when I said and then did add 90 minutes to the canner because I really only needed 75 minutes for pints. If you are using quarts you must set the time for 90 minutes.
I live at high altitude so I have to pressure can at 15 pounds which is one of the reasons I chose the Nesco canner because it gives me the choice between 10 pound and 15 pound weights.
The finished product can be used in soups and stews, or mixed with mayo, onions, celery, pepper and a dash of garlic powder to create a chicken salad for sandwiches. The chicken can also be used in a salad.

I’ve been canning chicken for years as did my mom when us kids were growing up. She always raised chickens, we had a mixed farm. I like leaving in a piece of chicken with the bone left in. The bone gives off lot of flavour but also helps the juice to thicken as the jars cool. This last time I canned chicken and pork, I sure did experiment with spices, turned out so yummy. I love your videos, you’re awesome!

Thank you for watching and your great comments! I have added some spices to meat as it was canning but haven't bravely tried it yet but I could see it being beneficial for sure. I love to can chicken with the bone in and when I do I usually cook it in the oven first for added flavor and then pack it into the jars with chicken broth before canning. Thanks again, Colleen

I just bought a Nesco canner and I'm loving your videos. It's nice to watch a fellow Canadian (I'm on Vancouver Island). One thing that may have already been pointed out (I'm a year late watching this), but I notice you're using iodized table salt. You're supposed to use canning (pickling) salt, or kosher salt, or even pink salt, but not iodized as it the iodine can change the colour of foods, or make the liquid cloudy. Probably doesn't make a difference with chicken anyway, but thought I'd throw that out there. Thanks for the great videos!

I love canned chicken for soups and salads... I'm watching all of your videos and I think I'm liking your Nesco canner. There's only two of us also and I always make sure to fill my Presto full up or I feel like I'm wasting time and space. I've got stored food under the beds because we don't have much cabinet space.It's a little nutty.... Thank you again Colleen I am really enjoying your videos I think everyone loves a caning video. Valerie that is fantastic! I appreciate everyone tuning in for the next video. I have been away on the weekend and didn't get my regular weekend video in but I will work on it right away and get it up. The truth is when we came home from the visit with the grandchildren I ran straight into the house with a small box of cherries and set about making a Spicy Cherry Chutney. My Nesco Smart Canner says to put the jars in and then add 8 cups of water. But I've seen alot of people adding 4 cups. And it's things like this that make canning so confusing when you're starting out. I think you forgot to wipe the rims after adding the chicken.

Try using Kosher Salt or Canning salt. Avoid iodized salt as iodine tends to give canned goods some unnatural, funny shades of color that aren’t normal. Also know that if you use fine grain table salt, the brine might get cloudy because of the anti-caking agents in this type of salt. Bottom line - table salt: yes, if you don’t mind the cloudiness. Is your appliance the same as an Instant Pot? You mentioned letting it steam and switching over. Did you close the valve after 10 minutes so it pressure cans?

The last time I used my canner.....I pressed pressure cook/high/time , I notice you just hit the high then time. Will pressing the pressure can first make it so its not using the canning function? It went through all the motions...counting down the E10 ect. Just wondering if I screwed up my batch by hitting the pressure cook button.

Colleen, really enjoy your videos... a couple of notes - according to the directions this canner requires you to put the jars in FIRST and then add HOT water. I noticed you didn't do that... just sayin. Keep up the videos. Thanks

Hi Katrina, I am an experienced canner who probably should pay more attention to the small things. That being said I spent some time trying to figure out the whether or not this could make a difference. I came to the conclusion that the only way it could make a difference is in the amount of time that it would take for the canner to come up to temperature. The canner itself won't start counting down until the appropriate internal temperature inside the canner is reached. It would save a little electricity to start with hot water but it would be minimal. Whether the jars go in first or last couldn't make a difference at all. Best wishes, Colleen

I didn't see you wipe your rims this time. I have the Carey Canner. It's identical to that one. I canned some pork and forgot to wipe my rims and they didn't seal

Thank you! I'm so happy you found the channel. The canning process for the chicken completely cooks it so all you need to do later is warm it up. I don't have one particular video on do's and don'ts but I would recommend that you find a good canning book and follow the rules for canning listed there. One of rhe most important things is keeping everything really clean. Make sure that you know the altitude where you live so you know how much pressure you need to can at. Chicken at my altitude is canned for 75 minutes in pint jars and 90 minutes in quart jars at 15 lbs pressure but it could be different for you. Keep watching videos because there are some great home canners who can walk you through it. Best wishes, Colleen

The new Nesco instructions say to use 8 cups of water. They found the 8 cups would ensure the canner doesn't run dry.

Hello Kelsie, Yes definitely go with the 8 cups of water. The instructions that came with mine said 4 cups but I see the instructions have been updated on the Nesco website to 8 cups. It was definitely a concern because I noticed when I was canning meatballs and roast that the machine was almost dry. Thank you for sharing this. Cheers, Colleen

Hello Melinda, Most of the items I can are from experience but any time I am not sure I go to the National Center for Home Preserving for guidelines. I too decided to look into one of these canners from Colleens videos....Thankyou Colleen! They were out of stock everywhere...and just today Wayfair.ca notified me that this canner was in stock! Should be delivered on Oct. 2! I’ve always done water bath canning....but was so hesitant with pressure canning...this machine convinced me along with Colleens clear instructions! It’s just hubby and me now so small batch pressure canning is perfect for us!

Hello Deborah, When I first bought my Nesco the instructions that came with it said 4 cups of water but the machines that have come out in the last couple years have 8 cups. This is one of my older videos so that would be the reason. I was glad they changes it because on one batch my canner was almost dry.

Why does the canner work best with wide-mouth jars? Is it okay to use jars that aren't wide-mouth? I'm going to be moving cross country and am going to buy things and have them shipped to my mom's house. I'm not sure I'll be able to get the wide-mouth jars right now. Thanks for all of your videos. Hello Rebecca, It is actually a matter of height. The wide mouth jars are a little shorter than the standard ones so they fit better in the canner. I wish you luck with your mom. Cheers, Colleen

Colleen, I tried canning chicken. They sealed. Didn't touch them for twenty four hours. Stored them in a cool dark place. After two days all my jars busted. I had to clean up over ten jars of chicken. What did I do wrong?

Now I'm worried about my nesco canner ... is high pressure 15 pounds or 10. I've canned dozens and dozens of pints of meats, soups etc. Instructions say nothing and I just assumed 10 pounds is low and 15 is high. You said you researched before you got yours. How will I know?

Hi Robin, the weighted gauges are used once you know what your elevation is. If the elevation where you live is 1000 ft or lower use the 10 pound or black weighted gauge. If its higher than 1000 feet use the 15 pound or green gauge.
