Looking for how to can dry beans? This video explains how EASY it is to can dry beans so you have shelf stable products in your pantry that can be eaten anytime. From large limas to pintos, it is easy to can dry beans!
*Please Note: After it had vented 10 minutes, at around 14 minutes in the video, I put the ten pound weight AKA jiggler on the canner. In the video I set my timer then. I should have waited until the gauge hit ten pounds or the jiggler made a sound clearly so I could be 100% sure that it was on 10 pound pressure. **

Mary, I just wanted to say that if you've never had home canned foods, you'll find that they are so much better than store bought ! I used to help my grandmother can all of her garden foods and they were so good! Wish I'd kept it up, but was too busy for a lot of years. Now I'm watching Mrs. Joan and others and thinking of trying it by myself. We never canned any kind of dry beans or peas, but I think I may try them first. Mrs. Joan makes them look so easy. It would be wonderful to be able to just open and heat them and not have to cook them very long.

I have canned beans various ways and they all seem to soak up most of the liquid over time, my dry beans done this way were great for a while but then soaked up the water - I did a bit less head space on those as well. This last batch I did the "right" way but have only been on the shelf a couple of weeks, am keeping an eye on the fluid level in those just to see but the beans thus far look like they held together well but the true test is when I use them LOL.

Mrs. Joan I canned 10 pints of black beans today. My Carey holds 5 pints. The first batch looks great, dark black, and pretty thick but just right. The second batch looks like all beans settled to the bottom. They don't seem to have absorbed water in the 75 minutes. I rolled them like I saw you do to look at them and they're clumped together. I carefully shook a bit and they did eventually come apart but are almost as small as when I put in. I'm figuring as they cool they'll be fine, but are they safe if they sorta cooked at the bottom of the jar not absorbing water? Would you eat or feed your family? No siphoning. No cracked jars. The canner worked perfectly. I let them naturally come off pressure. They sat about hour and half before I removed lid and them from canner. New to canning dried beans.

I'm not familiar with electric canners. But if seal is good and tight should be ok.

@AtHomewithMrsJoan I decided to can over. Since no water was in or around the wad of beans, I was concerned they might not have reached appropriate temp. It can't hurt to can again. If we get mushy beans, I'll add a teaspoon of bacon grease and call them refried beans. The Carey seems to be great; electric canner. RoseRed had a whole video devoted to canners. You might enjoy it. Lot easier than my heavy Presto; I do love the Presto though! Thank you!

How do you keep your beans fresh, from getting stale. And if they are stale how do you prep before cooking so they're not hard??

I don't have a problem with dry beans going stale. I store them in an air tight container.

I'm trying this but I've already put the weight on and it is not steaming I think it's my electric stove that I hate! It cycles up and down and I'm thinking that may be the problem . Some one will probably get a lot of bean soup!

Read your instruction book to stove. One lady found out only one stove eye was approved for canning. And some flat top stoves don't do it. Or call manufacturer. I hate this for you.

Since you put the same amount of beans in each con, why do you get a full L can with some beans and less in other jars?
@AtHomewithMrsJoan
@AtHomewithMrsJoan 19 дней назад
@@rebeccamoore760 Have you tried it and that is what happened? Several things could happen. Carefully tighten the jars finger tight. If some are too tight it will siphon out some of your water or product. Also beans can swell up at different times and make your jars not look as full. After taking out of canner beans at bottom and juice on top. But after they sit on towel they keep bubbling and cooking and usually all come out fine. I hope this makes sense.

We usually eat them up fast. I wouldn't be afraid to eat at 2-3 years as long as it had tight seal.
