My mom learned how to canned potatoes on her own. We had a farmer who let us pick his potatoe field after he harvested the field. We filled my pops pickup truck bed with potatoes. My mom was a single mom and this is how we survived. Once I get to my new place I'm going to start learning to can.

Now this lady knows the right way to do potatoes(I left out the boiling 3 minutes, and had jars full of starch) I did soak and rinse them for 3 20 minute soakings ( completely milky looking). I was new and now I see the light lol... Thank you so much, you guys are so pleasant and refreshing!!

I remember my mom water bath jams and tomatoes but never canning foods. I'm mid 50's and just bought a pressure canner. I'm so excited to learn something new.

We love the convenience of having these on the shelf. Makes for a quick breakfast with them fried or even oven roasted because you have a head start 😁.

I simply had to mention how much I liked your zucchini ‘meatball’ recipe. I passed the recipe on to my sister in Nova Scotia, then she sent it on to her neighbours and to friends in Quebec, and and they all loved it too! Thank you again! 🇨🇦

@@shelwhitley1011 MERCY! Don't hurt yourself! Drink a couple of glasses of water before you start. Wait about 15 to 30 minutes and then eat. The water will let you know when it's time to stop! My brother ruptured his navel and had to go to the hospital for surgery doing that kind of behavior. He no longer had a navel after that.

@@shelwhitley1011 oh thank goodness! You meant it facetiously! There is a disorder that some people have that their bodies do not tell them when they are full. Some are more fortunate in that their responce to fullness is merely delayed and by drinking water before they eat,the rhythm of fullness can have a bit of a jump start. So very glad you don't have that. It eventually killed my brother.

Another informative video. I've been canning for years, but never potato's. Mostly, tomato's for marinara and salsa. When my girls were younger I also canned some vegetables, fruits and jams.

when canning at 10-11 we need to get a pressure gage, and it stays there the whole time.The 15 pound you have to keep turning it down. a real headache. I just learned that this year. I ordered from Amazon a 10 pound pressure gage.. love it...don't have to keep watching all the time!!!!!!

You’d never know that I grew up in the country or that my mama came from OK and both her and gramma canned! I feel like a dunce! I had no idea potatoes could be canned! TheKatherine1958 The biggest thing you need to know is which foods are high acid and which are low acid. High acid foods can be canned in a water bath canner, but low acid foods(like these potatoes) MUST be canned in a pressure canner. High acid foods won’t kill you, but low acid foods will, if you don’t can them correctly.

"Flea market finds and a heart felt thank you"... released on April6 2019... you were showing a Betty Crocker picture cookbook and wanting to know the date of it... I am not sure if you found out that information... so I will pass on what I found out... that is a first addition... and it came out in 1950... by the way... I collect cookbooks also and you sparked my interest about that cookbook... oh and that "Loreta Lynn" cookbook you were showing.. I am going to have to find me a copy of that too!! @@kimberleyjane2338 No, not anymore. When your granny was canning back in the day they could be used 2 to 3 times but that all changed when we outsourced everything to China. Never ever use them more than once now unless you use Tattler lids.

@@annwhitten990 you can reuse your old canning lids for vacuum sealing only. They can be used many times that way just not for pressure canning.

Thank you for another wonderful video-I love your home and pantry. It is so warm and welcoming. This is a timely reminder, as I was just gifted some potatoes that I need to use. I also combine white potatoes with green beans occasionally. The first year I did this, I only had a partial canner of jars of beans, not enough for a full run. We had new potatoes coming in, so I put some beans and potatoes together in jars to finish filling the canner. I process for potatoes (time and pressure.) My family loved it. So now do this every year. All the best, Melody B in NC

This is my 1st year growing potatoes! I hope they turn out so I'll be able to can some! Great tip about using the medium burner!! I haven't pressure canned yet!😬 A little intimidating... @@WhippoorwillHoller. Now I have questions. Im wondering if you can help me out. I have a new Presto Canner that I used yesterday for the first time. I followed all the directions. I am at 500 foot elevation and I pressure canned at 11lbs. I used the ball book and unless I read it wrong that is what I thought it said. Secondly do I have to have my gauge tested? It is a new canner. I followed all the directions. I must have missed something because I was told that I needed my dial guage tested. It was at zero when I started and the canner was properly vented for ten minutes. I put on the weight that came with the canner. The other vent popped up. The dial rose to the correct pressure and I timed it for 40 minutes. Also I have a read somewhere that you are supposed to lift the jars straight up out of the canner but I can’t do that as I have a range hood that comes down a bit. So I have to slightly tip the jars to get them out of the canner. Now Im a bit disappointed. Help.

Thank you so much for this video, and the previous ones on canning. I'd love to give this a try. Canning doesn't seem to be a 'thing' here in England, but to be honest, the last few Covid filled months have unsettled me as regards keeping enough good food in the house, and finding ways to preserve food other than freezing it. My 83 year old Mum lives with us and we have been on lockdown since the first week in March...we are being driven crazy about now lol...August 1st sees us able to leave the house...finally!!! xx

A lot of us in the States grew up with canning Mothers and Grandmothers but never canned a jar...until the panic. I’m in my late 70’s and I started last year. Started with water bath because I had my Mom’s. Then I bought a pressure canner and have canned up a storm. Not hard, takes a little while to get the procedure down, but it is worth it. Everything I have canned has turned out well. My biggest problem has been maki g sure the jar tops are perfectly clean so they will seal properly.

It looks like the supplies for canning in Europe are a little different than here in north America. I have seen quite a few canning and preserving videos from Turkey, Greece, and other Asia minor and eastern European countries. But how to can is the same.

With my elevation everything gets done at 15lbs. I know what you said about parboiling before. I didn't do it and have the extra starch in the jars. I learned my lesson. Thank you for the instructions. Cheers

I have had that problem too, of the pressure getting too high and staying there, but if I start lowering the temperature a little at a time, I can get it to stay at 11 lbs. pressure. Thank you so much for your videos! I love watching them!

Presto Customer service says the temperature at 10 lbs of pressure is 240 degrees and 15 lbs is 250 degrees so there is only a slight difference in temperature if you go slightly over your recommended pressure, but Not below or you have to start your time over again. Thank you Lorie for explaining the regular burner tip! (The pressure was a lot easier to maintain).

Wish my pantry looked like yours. I am researching cabin kits . I plan on having my son build one for me. If you don't mind , What are the dimensions of yours? One minute I think a 24 x 24 will do. Next minute I am sure nothing less than 30 x 30 could possible be right. Help.

Cure sweet potatoes by holding them for about 10 days at 80-85°F and high relative humidity (85-90 percent). In the absence of better facilities, they can be cured between 65-75°F for 2-3 weeks.

Rachel Stark Thank you for this information. The high humidity is easy-we have 51 percent today, which is the lowest we have had lately. I am going to have a challenge to find 85 degrees or lower. Our high today is 92, and inside my home its about 68. Guess I will get creative, lol. Thanks again

We just dig them up and leave them outside for a while. Don't wash them when you bring them in. Store them in a dark cool place. I'm not in a humid area. You just don't want it to rain for a bit when you do it. Check the weather.

Mrs. Lori, I have a question about something on the potatoes. I can red potatoes all the time and we love them. i don't find the need to boil them as they are not really starchy, but I have canned Russets in the past and did not like the texture of them from the jar. They are grainy and mealy to me. My question is, by boiling them for 3 minutes will that possibly change the texture of them a bit so they are not so grainy? I would love to can some of them as we have a ton of them this year and we generally have made them into fries and put them in the freezer, but I would love to be able to can them if I can get the texture a bit more smooth. So, if I do boil them do you think it w=ill make them smoother like the reds? By the way, I love your channel and you and Mr. Brown are awesome, just like a lot of the people I grew up around in North Alabama.

Thank you Dave! Red potatoes are best to can Blanching helps a little on the starch, I tell ya, I've got alot of canner friends that are dry canning their potatoes, say they like them better It's not recommended, but they say it's safe, I dont know, but I'm going to try some and see, Happy Canning!

I'm doing a canner full right now of russets that my grocery store had on sale for $1.00 for a 5 lb bag. I did three 30 minute soaks to get rid of the starch and the water was very clear after the third soak. (The first soak I did with a good splash of lemon juice.) I have canned Russets raw packed with chicken for a chicken pot pie recipe; they were soaked and they came out really good.

This was a great instructional video. I stepped up my canning game last year and I'm looking to extend my versatility in canning, by adding potatoes, beef, chicken to go along with the jars of other ingredients we've been canning. We will have more versatility in being able to create meals from our pantry. Not to mention the feeling of security of having plenty of food on hand just incase some unfortunate issues occur.
