Today I'm canning a Hearty version of Red Beans to serve over rice.
If' you decide to follow along, remember to make it your own. You can
add in ground meat, smoked sausage, or leave it out. This can be plain
Red Beans if you like. The goal here is to can it up and make it your own!

I was wondering if, when you only have one or two jars of something, could you add jars of water to the canner to fill in the empty space?

If you are carrying anything for 90 minutes and Fort George you can and don't have enough of something to put in it of the same thing that you're doing can always add either beans Pinto beans any kind of beans chicken any kind of chicken even a raw pack might not look so pretty but you can do it anything that brace for 90 minutes in timing to process in pressure canning you can use to fill up your cannabis thank you so much God bless I have been canning just about all my life and I'm 66 years old God still has me here God bless go by the guidelines though I'm not a professional

First time canning.Yesterday I canned 7 quarts of chili and 5 quarts of taco soup. You would have thought I just gave birth. I took pictures of my jars and counted the sealing pings. THANK YOU FOR SHOWING US HOW TO DO THIS FOR OUR FAMILIES ❤️

Homestead Heart, I wrote down your recipe in an empty spot on one of my canning books. 🙂 Thanks for sharing! 🙏🏽 Ingredients: 5 lbs ground turkey 5 lbs red beans 3 lbs smoked sausage 2 onions 2 green bell peppers celery Salt White pepper Cumin Onion powder Garlic powder Tony Chachere’s creole seasoning 1. Soak beans overnight, then cook 1 hour on stove. Season with paprika, garlic powder, onion powder, creole seasoning, and salt. 2. Cook ground turkey til almost no pink. Season with paprika, garlic powder, onion powder, creole seasoning, and salt. 3. Heat up quart jars in the oven while beans and ground turkey are cooking. 4. Once beans are done cooking add celery, bell pepper, and onion to beans. 5. Mix ground turkey into beans. 6. Cut sausage into circles and sauté in skillet. 7. Ladle beans and ground turkey into jars. Add sausage directly to jars. Add liquid from the pot as needed. Leave 1 inch headspace. 8. Remove bubbles from each jar. Wipe rims with vinegar. 9. Tighten lids finger tip tight. 10. Add hot water to canner. 11. Pressure can at 10 psi (varies by altitude) for 90 minutes. Makes about 14 quarts.

Me either! They don't sell small red beans where I grew up! I'll look for them. I want to know the flavor difference. I'm not fond of kidney beans so I don't eat chili!

Showed this to my daughter and she made a big pot to can. It was so good that we ate it for 2 days and there wasn't enough left to can! Red beans taste so much better than kidney beans! Love your channel.

You use kidney beans in rice more so like rice and peas(kidney or gunga) Jamican style. With coconut milk boiled with rice andnwater and other spice trust me you'll then love kidney beans.

My daughter in love and I just used ours for the first time 2 days ago. She has the 930 and I have the 921. She did a double stack of quarts and I did a double stack of pints. We felt so accomplished. We love our All Americans.

What brand of stove is that,? My Electric stove cannot hold the weight of the canner, only the two small burners work now.

Thank you for your great job teaching start-to-finish canning so we can preserve GOOD, SAFE FOOD. You explained each step so well…having hot food, heating jars, heating water in canner, placing lids in pan of hot water, cleaning jar rims, carefully checking jar rims, not over-tightening rings, telling us WHY EACH STEP was vital, etc. You’re a great teacher & your new canner is so nice! I did not understand that it would hold 2 layers of jars, 14 qts. I thot it was for canning 1/2 gal. jars.🤣😊. I grew up watching Mom, Aunts, Gmothers & GGs can food using 7-qt canners. As soon as 1 was off stove, they’d put another canner on the stove. They kept 2 or 3 smaller canners in use all day. They did it just as you did, but never canned dry beans. Great idea. After they canned pork sausage balls, jars were turned upside down as soon as sealed while still HOT…fat rose to jar bottoms…sausage, without the fat, was EZ to take out of jars once fat was cold. Sausage jars were stored in dark, upside down.🐷

I just bought the deal of the century. A ball electric canner, mirro pressure canner, 4 boxes wide mouth quart jars, 1 case of regular quart jars, 1 case wide mouth pint jars with lids for 125.00 on Craigslist !!! I am going to make red beans in my new mirro canner. All of these items have hardly been used at all sooo excited to start canning

As long as it takes to process you are better off having the larger canner and doing similar foods that take similar processing times and can all at the same time in one canning session... ie two different foods in one canning session but only if they have similar times

Thanks for the preview,, but remind canners to always take the rings off and wipe off the jars of any liquid before storing in the pantry. If left on, they tend to rust. This was a tip from Grandma when I first started canning...Blessings to y'all.....

A simple thank you is just not enough to show how much I appreciate your demonstrations. I pressure canned my first two products yesterday. Carrots and chicken breast. I have never have not had a hobby in the six years since I have been retired. This was minimum cost to get started and I will have meals in my pantry that I can throw together in minutes come winter time. Thanks so much for what you do.

Before covid, my hunny liked Popeye's red beans and rice. Me, not so much. Your recipe looks and smells great. I made 1 lb beans,1 lb turkey and 1/2 lb smoked sausage. The teaspoon of broth that I tried was amazing. My canner is filled with 4 quarts and 1 quart of the left over broth topped off with water, to be used for side dish rice. I know this will be a pantry staple. Thank you so much for all the knowledge that you share with us.

I've learned so much from you! When I was young we canned fruits and veggies. And as I tell my sisters that I've been canning beans, rice, soups, meats, etc. Their like, what..... And they all want to try everything I can. Now I have three sisters, so I just keep sending pictures and the tell them how to do it. And every now and then , surprise them with rewards of my labor! Thank you for all your knowledge.

You should invite them over and do a canning day together. Divide up the jars when they leave. We’ve did that and it is a fun productive day. Have fun with it. 👩‍🌾❤️

YES; The lid is supposed to wobble like that. BUT, you are supposed to lube the canner rim (slanted rim) where the lid sits WITH petroleum jelly. Also, the way you made sure the wobbly lid was “even” is perfectly right. Then as you tighten the screws, make sure it stays “even”, or it can leak steam at the lid. Great recipe❣️

Mrs.H I was just watching threw the play list and I saw and rewatched this video and I'm now headed to the freezer to count sausage,and ground meat to make it AGAIN. I made your red beans and sausage 2 years ago and we have a water mess in our basement and as I had never pressure canned, the humidity caused mildew in the neck of the jars. I was afraid to use so dumped 6 jars! Ugh! However, I just finished 7 quarts and have beans leftover to make some red beans and rice tonight or tomorrow! Yum! Keep teaching, please. I am not a newbie to canning itself, and am getting better at pressure canning, but it gives me piece of mind to have it on the shelf! I know you are reaching alot of new canners and world problems aside, we need to keep teaching the next generations how to be independent!!!! Besides, you are fin to watch!!! Thank you!!!!

I made another batch of these hearty red beans this weekend. 11.5 lbs! I made 13 pints of Hearty red beans with veggies. (Celery, onion, carrots, bell pepper and garlic) And 13 quarts of the hearty red beans with veggies and meat. (Ground beef, Sausage and Steak). This is a great recipe!

WOW!! Finally finished!! That was so much work...But well worth it for my family 😊 I did 7 jars in my Presto Canner. I had enough left over so we will have Red Beans & rice for Dinner tomorrow 😋 It's now 1am!!! Going to Bed now!!!!

"Mama Sue" is what I named my All American 921. Those oven gloves are great for handling hot jars. Ma'am, please use your jar lifter when putting jars inside the canner. That girl holds some heat 🙂 Be safe, Blessings 🙏🏽

Wet your hands and sprinkle with salt prior to cutting. Don't know why it helps, but was told by a saucier chef - tried it, and it worked.

Refrigerate onions a few hours before you cut them and it lessens the tears big time

That steam venting also helps to create a partial vacuum inside the canned to help make the vacuum within the jars! Steam venting is very important.

When I can a small amount of jars I add 6 empty jar with water and no lids or rings it works every time without any breakage.
