www.permies.com I made this video to show the very basics of canning how to. I've done so much canning, I don't really think about it any more. Jocelyn had never canned anything before, so I thought this would be a really good opportunity to film somebody canning for the first time. When I talk to some people, they avoid canning because they think it sounds really hard. I think this video shows how easy it really can be.
Jocelyn Campbell (www.jocelynsevents.com) learns canning from Liz Johnson in Stevensville, Montana (just a bit south of Missoula, Montana).
Plum jam. Sterilize jars and lids. Fill jars to the right level. Boiling water bath for 13 minutes.

Im wrapped people are putting out these video's as it encourages self sufficiency and self reliance. Our Grandmothers would work away in their kitchens for days preserving the abundance of home grown produce to keep their kids healthy and well fed throughout the year. The times they lived in were so much harder than today, yet with all our modern convienances, kids are going to school hungry. We need to get back into these basic home crafts. They're good survival skills. Thanks for the video!!

I've been canning for years. My jars have been used several times each so far. If they don't break, crack or chip there is no reason they won't last me the rest of my life. Lids are single use. At 10-12 cents for a lid, it's not a worry.

Yes. Some people try to re-use the lids, but the success rate is so low that it becomes annoying to even try. But the glass is re-used dozens of times - I see no reason why they cannot be re-used hundreds of times.

The sugar requirement should not be considered "outdated" people have been making jelly for centuries. Why ruin a good recipe?

Water bath canner can be used for high acid foods. Pressure canner must be used for low acid foods. If it makes you more comfortable, you can use the pressure canner for everything.

Thank you for posting. I'm new to the jam business. Tho I knew I should sterilize my jars, I never knew I needed to boil them for 10 minutes. I will surely incorporate this new knowledge. Thank you ❤

I took food science major and the professor there only explained the process but we don't get any practicing the method. And after I watch your video, now I know how to do it. So, thank you very much

Excellent you just assured me that my DIY jam making in bulk process was pretty close to whats required for sterlised jams. Only thing I dont have in thailand is a jam jar lifter - we jam local mangoes, pineapple and tend to use a lot of lemon and added pectin instead of so MUCH sugar, add the labels then sell them to an eager audience who dont like "factory" jams. I'm sure more folks would do this if they knew how easy and wholesome the product is compared to the automated jam makers products, I'm not doing a video as I swear too much whilst getting blobs and boiled!

Thank you! I did eventually get my answer from a friend and started canning a few months ago! I have made apple butter and pickled beets. This week I will do coleslaw. I look forward to doing low-acid canning once I get lucky enough to find a used pressure canner at a thrift store one day. :) Happy canning!
