Sterilization and Canning Procedures
THIS CANNING PROCESS IF FOR ALREADY COOKED FOOD NOT RAW FOOD!
"Please follow the canning guidelines if you are looking to boiled ANY raw meat. "
Method for Sterilization:
1. Start by getting a large boiler and filling in about a quarter full of water.
2. Then bring the water to a boil and place your Mason jars inside then cover.
3. After letting the water boil for about 15 to 20 minutes, then remove your jars and place them on paper towels or a cloth on the counter top.
Method for Canning Procedures:
1. After your food items are cooked and ready to bottle, scoop hot liquid and put inside your mason jars.
2. Continue doing this until all jars are complete and leave ½ inch from the top.
3. Clean around the top of your jars removing any food from rims.
4. Then place caps and lids on your jars finger tight.
5. Then place your jars back in the hot water bath and start boiling the water for another 10 minutes with the cover on the boiler. ( Longer if not sealed )
6. When done, remove from the water bath and leave at room temperature.
7. You can check your lids, 3 ways.
1. Remove the screw cap and lightly run your finger upwards on the lid if it doesn't remove its seal. Put the screw cap back on tight then date and label each jar. Then store in a cool panty or room.
2. If the lid is not popped up when you touch the middle it means it’s sealed.
3. If you heard all your jars pop by counting the pops it is sealed.

There was a comment right at the beginning, I didn't even know, after making the video and even posting it I didn't know I was using the lift backwards. The thing I noticed was there wasnt any water inside the jars 🤔 How do they get sterilized? Also, there wasnt enough water in the pot to even "sterilize" the jars! 🤔

You are using the jar holder up side down. The red side that is curved and rubberized is designed to hold the jars without slipping. The black hard plastic side is more likely to slip and drop the jar.

Great information here. I watched a Ball canning video and they said not to put the lid on too tight. Their explanation is that the lid needs some movement during the canning process and that if you over tighten you will create a false seal.

Hi Bonita, a couple of things from an old canner(I asked for the process time for the apple pickles). First of all the new standard rules for all canning be it PC or WB is you no longer need to sterilize your jars and lids if your process time is 10” or more as the process time itself completes sterilization. Second, in WB canning the water must minimally cover the top of your jar by at least 1”, 2” is better at a full rolling boil for the full process time. Once the process time is complete you let the jars rest for 5” before removing from the water bath and sit on a draft less counter for 24 hours and check your seals. It’s important to distinguish for new canners the difference of WB and PC and when each method can be safely used. Ie acid versus non acid foods.

The cooking time is by taste and texture for your liking and then following the process for canning, thats why I shared the canning process to help. Thank you for sharing you are a old canner and it's nice to get feedback from our viewers with canning experience. But we can agree on one thing, canning anything you need to keep safety in mine first. I as well been canning for many years and feel the video info I shared gives people a understanding in the process and method. @@ingridredd9804 how long after processing? You have 24 hours for the full process to be completed but if it’s been hours you can reprocess with a new seal or just place in refrigerator and eat

Yes Paula, that would be the right way to do it. That was my first time using this jar lifter and I got to say my last. I usually take the bottles our with a pair of tongs or my wooden spoon. I really appreciate your step by step video. I thought to sterilize the jars had to be submerged in water so I’m grateful to learn that’s not necessary. I have an old large canner that is of one piece with bent handles on both sides to lift and rest the jars after the water bath. Should I use an additional trivet on the bottom? The jars on just slightly above the bottom of the canner.

Hi Susan, I just seen your message and thank you for stopping by and for enjoying our video. Its nice to have the bottles lifted about 1 inch from the bottom. Its necessary to have the bottles totally submerged in water if you do its ok, but the temperature in the boiler with the cover on boiling for 15 to 20 minutes will kill any bacteria in the bottles. Years ago our elders here would cook the mason jars in the oven on a tray for 20 minutes on 350ºf before they put them in there they would clean them first in hot soapy water and rinse with water and put upright on a tray and put in the oven. So whatever way you decide to sterilize your bottles is up to you, follow the video for sealing and storage as well. A little confused why the grip tool is being used upside down. The rubber part is rounded for a reason, to grasp the jar necks.

Used this to can salsa and it turned out great. Canning the salsa and leaving it for a month really gives the flavors time to meld with each other without having to worry about the salsa going bad

Thank you for sharing you information. You do realize that you're using your 'jar lifter' upside down? The rubberized end should fit around the neck of your jars without effort, causing little slippage. AND this can be done one-handed. Thanks again.

Hi again, was able to do canning of 3 jars of tomatoes. Happy to share that 2 of them did seal, one did right away while the other took an hour or so. I’m not sure if the third jar will seal; just in case it doesn’t, what remedy can I do? Many thanks again, Ms. Bonita. This is indeed a very exciting project…with your help specially!

Hi Maria, Thank you so much for your message and for stopping by, canning is exciting and I'm glad you are interested in making some. When your lids don't seal it could mean a couple of things, one your cap is licking or food was left on the rim. You can put the unsealed one in the fridge and use first, but in the future make sure you clean the rims good before you place the caps on. Enjoy Bonita

Thank you for your message and for stopping by, yes you can but it got to be cooked first, you can bottle, soups, jams, jellies, pickles, meats, pickle eggs, but it all got to be cooked. the veggies can be blanched and bottles. Hi and thank you for your message, I've never canned sardines. I'm not sure about a pressure cooker sealing jars, maybe just use a boiler with hot water and a medium heat to sterillize the jars and seal the jars. Thank you for stopping by. :) Bonita

I just picked up my first set of jars 🥰 can I sterilize my jars and set them aside until they’re ready to be used ie weeks later? Or is it recommended to do it all the same day? Thank you❤

Great video but.....I have a question in the use of the jar lifter. Are you using it correctly? Every video I see has the black rollers in your hands and the red rubber end to wrap around the jar when picking jars up.

hi bonita,nice informative video. i am planning to export canned onion pickle/cooked canned jack fruits to Australia because one of my friend having a shop there.is this the canning procedure worldwide for exports also...do we have to use any preservatives? and how long it can keep before the expire date?

Hi and thank you so much for your message and for your interested in bottling food, one good thing about having pickles, fruits and food bottled its there for the winter time when you are looking for it. Anytime you are canning or bottling your own food its for short term not long term. If you make something today jams, jellies after you bottle them date and make sure its stored in a cold dark cupboard, if sealed properly it would be good up to a year or longer. If it don't seal properly keep in the fridge for a few weeks or month until eaten. I have jam, beets, pickles thats made in 2018 and they are still good. But keeping them stored properly and cold dark place and sealed totally. I don't add preservatives only what the recipe calls for. Enjoy and happy bottling. :) Bonita

Can you use the one piece canning lids instead of rings and seals for hot bath canning ? Have you used these type of new lids ?

Hi and thank you for your question, I have used them before but Its hard to tell if they are sealed properly, but it should have a bubble on the top and if thats down or locked in place it will be sealed. Sashine B. The jars do need to be submerged in boiling water. Also if you use a jar lifter like in this video, you lift the jars out with the rounded rubber grips not the black plastic handles. You hold onto the handles.

Thanks. But Bonita didn't have much water in the pan, not enough to submerge the jars entirely, so that's what made me wonder. I also wondered if there is an advantage to turning the jars upside down when they're on the steamer rack? I have one of those jar lifters and they are terrific. I also have a wide-mouth funnel which is a bit easier than using a ladle to fill the jars.

Sashine B. Thank you for all your suggestions, and thank you knockout kitchen for the tip on the lift. I could never use that thing and I guess that's why. But you don't need the bottles all the way submerged in water, the heat and steam seals your jars. You can also seal your jars by putting them in the oven, because again it's the heat that seals your jars. If you were cooking raw meat like moose meat you would need to boil the bottles because you are also cooking the stuff inside. Remember that if your bottles are hot and the liquid is hot and you pour that into the bottle cleaning the rim and capping the bottle it will start to sealing process and by putting them in the boiler with a grate at the bottom, water quarter the way up, then covered you will seal your jars. Hi Nella: Thank you for your message and for stopping by, because you will be having the jars sterilized and hot, the pesto will be hot sometimes the jars seal on its own. HI Elliot: Thank you for your message, if that's all you have right now I'm going to stay yes. Just remember after you boil the jars and lids, make sue they are clean of any food. The lids on the top usually got a small bump on it and that got to be totally down to know if it's sealed. If you are using them for short storage like in the fridge it will be get, otherwise you are not sure if they are completely sealed and the food would go bad. Good question Francis, if I got new bottles I usually clean them before or put them in storage. But if you are using bottles you have used before and stored in your clean. These bottles are good for many food, jam and soups, I'm sure the will be good for broth. Double check the bottles to see if they are sealed before storing your jars after you seal them. When making/jarring kimchi do you do the last step with boiling the full jar again? Kimchi is a fermented side dish and is suppose to be fresh/not cooked and crunchy and usually served cold.

Hi and that's a good question? Years ago most of our elders just did what you just asked but years ago they had more cold storage areas need we do now. But if you are only making a small amount and it will be eaten within a few weeks that can work. But if you are storing it for the winter most diffently do the hot water steam sealing after you bottle them. I hope that helps and have a wonderful day. @@mariacorazonlua2532 Will! They say not to use shore bought reused jars because the seal is cracked after you open it. But thats all they used years ago and it worked great for them. So I'm going to let you make the call on that one. You only got one way to check is if the cap is locked at the top, you will know by seeing the cap air locked. So this morning I checked my cans and noticed that two didn't look indented so I pushed down on them. After I pushed down it stayed in place and didn't pop back up and now looks and feels sealed properly. Is this jar completely sealed? They don't pop up and down and never did, just popped down when i pushed and then never came back up. I have had this happen a few times and this is my first year canning. I hope I explained that okay..

Hi Hailey, Thank you for your message and for stopping by, after your bottles have come to room temp and they are popped up you should keep those in your fridge for safety reasons. You can check them by twisting off the lid and use your thumb to lightly slide up the cap and if the cap stays on its sealed if the cap pops off its not sealed. But anytime the cap is popped there is air in the bottle and you don't want for bacteria to set into the food. Also double check your caps to make sure they are not damaged before using them. Clean around the rims of the bottle good to remove any food or liquid this will prevent it from sealing. I hope this helps and keep bottling and thank you. Bonita

Did anyone else notice that she uses the "bottle remover' upside down. The red rubber coated end holds the jars and then the handles are much closer together and easier for your hand to grip.

That was my first time using that lovely rubber handle bottle remover and after we made the video we both said the same thing. LOL :) I usually just use a glove or towel to remove the bottles from the boiler.......But the sterilizing and canning video is all good and the right way to bottle. Also, I know you might not agree with my process of canning tomatoes - we boil the tomatoes down, goes through the mill (electric) then boil again and jar. We do not water boil them again once in the jar. It's been a tradition for decades and has been successful.

Twist on jars should have a little round pop up bubble on the middle of the stopper. When you steam bath the bottles the same as the lid and seal caps and after you boil the jars for the 10 to 15 minutes with the food in and capped. Remove from the boiler and place on the counter top to go to room temp, if the seal in the middle goes down then jar is sealed. If the top clicks up and down when you touch it, the bottle is NOT sealed. I hope this make sense to you and message any time. Bonita

Hi Amber, Thank you for your question and for stopping by. I guess you can use foil wrap just crumple it up into a loose ball and put a couple of them at the bottom of the boiler. It is just to keep the bottles from touching the direct heat and crack. I hope this helps and all the best.

Hi Taz, Thank you for your question and for stopping by, if it didn't seal there is a problem with the lid or there is food on the rim of the bottle. So remove the jar from the water, remove the lid and clean around the top of the jar with a piece of paper towel. Then get a new lid, you can reuse the twist lid. Put it on finger tight and place back into the boiler and seal it. If its only one or two bottles you can place them in the fridge until you are ready to use it. Right! There is so many mixed information about sterilizing our jars. The jars just need to be steamed in hot water to remove any bacteria that is in or around the bottles. BUT your bottles if just bought at the store or used before, wash them well in hot water and soap, or dishwasher to remove any food or dust. Have a lovely and thank you .... Bonita

But if you are only going to bottle a few and you can refridgerate until all eaten. Making sure when you bottle make sure all air is out of the bottle and 1 or 2 inch from the top. Hi Miriciao! Thank you for your message and for stopping by and for leaving a question? This canning process is for food thats already cooked and you need to seal the jars. But if you and making a sauce of trying to cook food inside the jars you will need to follow a longer cooking and sealing process. I hope this makes more sense to you and remember if you have the jam, soup, pickles or beets made and already cooked this process is only 10 minutes to seal the jars. Enjoy Bonita

Okay, I am a man so I know nothing about canning, Lol. But, one thing stood right out at me as being a potential problem. When you took the sterile jars out of the pot, you set them upside down with the rim of the jar on a non-sterilized cutting board or wooden tray. How would that preserve the sterilization of the jar rim? Maybe that doesn't matter?

I'm going to say draining the bottles on a clean towel or board would be safe, but if you wish to leave them facing up or on a drying rack that will work too. The important thing when it comes to bottling is having the bottles and lids clean and warm before putting the food inside. After if you are planning to store in a panty or cold cupboard you need to make sure the rims of the bottles are clean of food and the food going into the bottles is hot, then put lids on. I do believe 10 or 15 minutes for something that's already cooked to seal in a jar is more then enough.....Most of the canning sites are sharing with you how to seal the jars with uncooked food in it and you would have to leave it in the hot water and stream to cook and seal. I am trying to see if i can preserve seafood or snails in a jar with there stock liquid, my sister told me to get the jars and simply put my seafood in it and then add the boiling the stock and fill to the top and put the lids on and after it comes to room temp it should suck the lid tight and it should last for at least 6mo or so ,what do you think of that method?

Thank you for your question and for stopping by, I haven't bottled seafood but my sister in law bottles it all the time. It is very tricky and could be danger's if not sealed and stored properly. Just remember any time you bottle anything you must follow a sterilizing process and then use a hot water bath to seal them. But for seafood you should keep the jars in the fridge after and date it. @@bonitaskitchen hmm well i would not have bothered with any of these methods if i only wanted to keep them around for a few weeks because usually after boil simmering my snails for 4 hrs in a stock i let it cool down and put it all in the fridge and they last for several weeks meaning they taste ok but who knows if they got botulism or what?? so i was trying to extend the shelf life for several months at room temperature storage to see if it would work and if there is a simpler method than psi canning or even boiling bath and my sister told me about this open kettle method where only boiling liquid is added to the contents of the jar and let it seal as it cools, so what i done was pick the snails out of the shell at room temp, placed the meat in the jar and poured in boiling stock to the top and closed the lid(sterilized by boiling) and placed the jar 1/4 way in the left over boiling stock in the pot and put the pot lid on so that the liquid stayed hot for a longer period ,the next day i cheeked and the lid of the jar was def sealed even though i saw some micro bubbles in the jar i think these are vacuumed steam so its just space with no air and could not be avoided , so do you think im taking a risk leaving this on the shelf for a few months to see if it works? its a test to see if it survives spoilage but then again who knows if there is botulism or not since it can not be seen,smelled or tasted ,,but i will be further cooking the snails once opened so not like im eating out of the jar,, what do you think? id hate to see this go to waste leaving it for several months if it dont work and wondering if instead of this test i should put them in the fridge or leave em on the shelf but no longer that a few week(maybe still risky if eaten out of jar without cooking) ,,idk what to do now

Then if you are vacuum sealing I don't think you will need to water bath again. BUT you must make sure they are sealed before storing them away. Maria Russo I just noticed your message and sorry I'm just getting back to you, you have a lot of canning to do and having a faster method would be best. If you had your dishwasher sat on a high setting and you can wash the bottles and lid first I haven't seal my jars in the dishwasher before but I can see it working. If you wish to use your dishwasher again on a high temperature and place the full jars with the lid and caps on finger tight, run the dishwasher for 20 minutes or longer and try a few and check them to see if they seal property. The most important thing is to have your bottles properly sterilized so no bacteria don't build up inside the bottle. Great tips on canning! But is it me or does she use the jar "tongs" the wrong way around? Coz I use mine the other way around... The curves fit the round jars much better I reckon..

I did not know it was the wrong way until after the video was made, of course at that point i wasn't changing it because I wanted to see how many people would know or see it. Hi and thank you for your message, you can bottle lemon curd. Maybe only make a small batch at a time, you can keep in the fridge after opened. Make sure all the lemon is removed from the lids of the bottle so it don't brake the seal on the cap. Enjoy Bonita

Hi Anamela, Thank you for your message and for stopping by, I haven't bottles garlic mayo. But I'm sure you are only making a bottle or two. If so most diffently sterilize the bottles first and lids, dry will and add garlic mayo to bottle, refrigerate ONLY, for 1 to 2 weeks fridge self life until you need to toss. You don't need to do the canning step after because it will cook the mayo and you don't want that. I hope this helps and only make a bottle or two at a time. Enjoy Bonita

Thats not a stupid question, If you wish to sterilize them in there that will be prefect, but it will take longer then just boiling them in the boiler. I guess after you wash them while they are hot fill and cap your jars. Thank you for your question and for stooping by. :) Bonita

so you are mostly using steam for the whole process, is it necessary for the bottom of the jars to be touching the boiling water?

The heat and steam is sealing the jars, you should have them in the water but not touching the bottom of the boiler to crack the jars. You can also have them all the ways in the water to seal. Bonita

@@ARCSTREAMS Depending on what you are canning? If you are putting the food in uncooked you will have to boil it longer in the boiler or pressure cooker. The canning process I'm showing you is for food thats already cooked. Like: jams, jellies, pickles, soups, or if you are pickling veggies with a hot liquid. If you are canning raw meat you will need to cook it for a longer time to remove the bacteria from the food.
