Linda your food always looks very fresh and oh so clean. Yes ma’am I’d eat your food any time. I don’t eat otter peoples food simply because I know they don’t practice cleanliness. U always wear gloves when u handle food and I have not seen a video when u were handling meat and not wearing gloves. Maybe there are but I haven’t seen one. I’d add some cauliflower to that mix lol. I have the same Ball water bath canner. Can you double stack in that canner? I know the water still needs to be 1-2” above the upper deck but can it be done?

Curious to know, can you use the brine of an opened can of these to make another batch? I feel like the brine would add even more flavor to the next batch but not sure if there are any canning rules that go against that as I’m new to canning.

Yes I pick a cauliflower with garlic onions and bell pepper it's delicious are you going to use hot peppers I jalapenos or syrianis

How hot is your mix of veggies? I don’t like things too hot. Do you also use her 3 1/2 water to 4 cups vinegar ratio. I would love to try it with cauliflower

@@franmoyer8527 if I can it for later yes. ROUGE CANNER ALERT. CAULIFLOWER IS NOT RECCOMMENDED FOR CANNING. If I just make a quart for the fridge....no. It's a 2:1 vinegar to water. I blanch the veggies for about 1 minutes and throw them into ice water then into the jar. The amount of jalapeño you like it up to you. Me I remove half of the seeds. Let the jar sit on the counter overnight and then in the fridge for at least a week before eating. The veggies are still crunchy this way. Again if you like them softer...Blanch longer to soften them up...your choice.😊

It would be really helpful if you posted the recipe for Escabeche that you are using so those of us who only want to do a few jars can figure out how much to buy. (“A lot of” something isn’t really helpful. :-) I have made this but never thought of canning it - I’d really like to know the quantity on your recipe. Thanks!

The amount of jalapeno v carrots and onions is up to your taste. Some people will put mostly carrots and only a few jalapenos. Me...i also use cauliflower for my veggies.

Hello Linda, do you know how long they last? I canned jalapeños and pickles 3 years ago and are mushy. Maybe they don’t last long. Please help.

Al about survival. Eat them mushy or add some alum. The same stuff used to keep pickles crisp.

You can add pickle crisp in your jars it will say crunchier longer

Or you can open kettle can if you feel safe with that. With the amount of acidity I would.

Looks great! Definitely going to try it! But please, the earth weeps over this silly trend of wearing disposable rubber gloves for cooking. Just wash before and after. The earth will love you.

@@livinlavida4069 I know that is why this time , but I've seen multiple videos when gloves are worn for no reason. Even with jalapeños there is no real reason to disposable gloves. I use a knife and fork to cut them to avoid the burn.
