Mrs H, I hope you don't mind but since you said you couldn't edit and this recipe sounds so delicious that I went ahead and typed up your ingredients and instructions in case someone wanted to print or save the info. Mrs H's Eggplant Chili Recipe: Yield: 6-7 Quarts (Normally get 7 quarts but it can depend on how big or small the eggplant is cut up. Larger chunks = less quarts because chunkier) Preservation Method: Waterbath Canned Note: Have waterbath canner prepped with hot water and empty hot jars prior to filling jars with cooked chili. Total cook time: 1 hour Ingredients: 4 cups of chopped onion (roughly chopped) 3 cups of chopped bell peper (roughly chopped) 6 pounds of tomatoes (roughly chopped, can be red or green, cored but not peeled) 18 cups of eggplant (roughly chopped) 2 tablespoons of garlic (powder, minced, fresh - your choice, she uses minced) 3 teaspoons of salt (optional) 3 teaspoons of onion powder (optional) 3 tablespoons of chili powder (she uses 1 tablespoon each of: ancho, chipotle, regular) 2 tablespoons of smoked paprika 3 tablespoons of cumin 1 teaspoon of cayenne pepper 1/4 cup Louisiana Hot Sauce - to taste/optional (Mrs. H says LOUISIANA hot sauce y'all) 6 tablespoons of honey 1 and 1/2 cups lemon juice Note: Reserve Lemonjuice, honey, and hotsauce for the end per directions further below. Do not add them in early. The lemon juice is important for the water bath canning process. Cooking Directions: In a large stockpot on medium heat add all of the ingredients EXCEPT for the lemon juice, the honey, and the hot sauce. She said she normally doesn't put onion powder in her chili recipes but likes it with the eggplant. Stir all ingredients around in the pot to make sure it's all combined well. DO NOT ADD ANY WATER! The eggplant and tomatoes will release plenty of fluid for this recipe all on their own. Set timer for 45 minutes. Stir frequently for the first 15 minutes or so until it's bubbling nicely and you can see liquids releasing from the eggplant and tomatoes. It cooks down pretty fast. Be sure to stir frequently as you don't want anything to stick or burn on the bottom. After it's released a good amount of liquids (she says usually about 15 mins or so), then TURN THE HEAT DOWN TO LOW and simmer for 30 more minutes. Keep eye on it and stir occasionally to avoid it sticking/burning. When timer goes off at 45 minutes: add in the lemon juice, honey, and hot sauce and then simmer for another 15 minutes at low heat. Canning Directions: Add chili to jars leaving 1 inch of head space. Remember to debubble and wipe rims before adding lids to ensure a good seal. Fingertip tight. After adding all of your full jars to canner, make sure to bring it up to a full roiling boil. Water level should be at least 1 inch above the top of the jars after they are in there. After it comes up to the full roiling boil, then you can start timer for processing: Quarts = 40 minutes processing time Pints = 35 minutes processing time Mrs H Serving ideas: Can eat alone or with garlic toast/bread Can eat over rice My serving idea: I would cook some macaroni pasta on the side, and put some of this delicious sounding chili over the pasta in a bowl and top with some shredded cheese and a dollop of sour cream. That's how I like my chili.

The recipe reminds me of ratatoullie, that my wife Ninette and I enjoy. I would saute the onions and peppers then add the tomatoes and egplant . it means you will have to use a bit of olive oil. HOW-EVER great recipe, I will get Wifey to make this ONE, now I know she can Water Bath it as she is still yet to try pressure canning. yes she has all the equiptment.. Smile.
Are you sure you were not a teacher in another life? You explained perfectly the procedure and repetition is the best method. I even had time to write all the ingredients down as you listed them. I love eggplant and hope to get a few this year. The plants are beautiful but I live in the north so I'll bring the pots in for the fall and winter if necessary. Our season is very short. I made this tonight and canned 6 pints! It turned out as delicious as you said it would. This will be good as a stew, over couscous, you can add ground turkey or beans or both (as a side), serve over rice, or over tacos. This will become my go to for preserving eggplant. Thank You for a tried and true recipe.
I've never heard about an eggplant chili. I really enjoyed hearing about it. I think that I will try a small batch to see how we like it. You explained very well.

I absolutely love you guys. I grew up on a farm. We had 3 1/2 acres of garden every summer. Canning was huge at our house. But the rewards during the winter were so good. Now I live in a area I can't have a garden. I do have peppers tomatoes, and green onions. But I really miss the large gardend. I would like to have some Hood apples

You're an absolute life saver Mrs H! We have a larger than usual aubergine / eggplant harvest, and I couldnt find any canning recipes. My OH loves aubergine chilli, so he's going to be as happy as Mr H. Will try this as soon as I've finished what didn't get done at the week end. Will be making pints not quarts too, as better for our smaller household..
