Caramelized Banana Flan
For 1 600 ml container (Ingredients)
(Caramel)
40g sugar
1 tablespoon water
2 tablespoons hot water
(Pudding liquid)
120g banana
30g sugar
180g milk
2 whole eggs
1/2 teaspoon vanilla paste (or a few drops of vanilla extract)
Bake for 30 minutes in an oven preheated to 160C (320F).
(Summary of Method)
Heat the sugar and water for caramelization over medium heat.
When the mixture turns dark brown, turn off the heat and add hot water.
Spread in a container and refrigerate.
Mash the bananas in the caramel pan.
Sauté over medium heat, add milk and sugar, and heat to almost boiling.
Let cool to about 60°C.(140F)
Break the eggs into a bowl.
Add the banana and milk from the pan little by little and mix.
Pour the mixture into a caramelized mold and bake in hot water.
Bake in a 320F (160C) oven for 30 minutes.
Leave in the oven for 10 minutes.
When a film forms on the surface, remove from heat and refrigerate.
