Caramel Pecan Clusters
1 pound, 230 grams or 500ml, pecan halves, toasted
12 ounces, 340g, semi sweet chocolate, chips or baking bars
2 tablespoons, 24g, shortening
Toast pecan halves in a single layer in a 350°F, 180°C, oven until they begin to brown and are fragrant, about 8 minutes. Or roast the pecans in a dry skillet on top of the stove turning often until they begin to brown. Do not let the pecans burn. Roughly chop the pecans. Arrange the nuts in small clusters on a parchment lined baking sheet.
Chewy Caramel
16 ounces, 450g, by weight, light brown sugar
2 cups, 473ml, light cream or half and half
1 cup, 237ml, light corn syrup
1 cup, 223g, lightly salted butter
1 teaspoon, 5ml, vanilla
Melt the butter in a 4 quart sauce pan over medium heat. Add the sugar, syrup, and half and half to the pan and bring the mixture to a gentle boil. Clip a candy thermometer to the side of the pan. Stirring frequently, bring the mixture to 242°F, 117°C. This will take close to an hour. Do not leave the caramel to boil unattended since the temperature can quickly rise, especially in the last few degrees. Once the caramel reaches temperature, remove the thermometer from the candy and the pan from the heat. Stir in the vanilla. Allow the caramel to cool in the pan until it can hold a mounded shape, about 15 minutes. Working quickly, scoop a tablespoon of caramel onto mound of pecans. Spraying the spoon with cooking spray helps prevent sticking. Excess caramel can be poured into a pan coated with cooking spray.
Allow the caramel to cool completely, about an hour. Melt the chocolate and shortening in the top of a double boiler. Spoon and smooth about a teaspoon of melted chocolate onto each pecan cluster.
Serve at room temperature.

Caramel Pecan Clusters--European Measurement Conversion 230 grams or 500ml or pecan pieces 115 grams lightly salted butter 225 grams light brown sugar 250ml light cream or half and half 125ml light corn syrup 2ml vanilla 340 grams semi-sweet chocolate pieces (or chips) Cook to 116°C This is just a metric conversion. I know some of the measures are preferred as weight instead of volume. I'm not sure which you needed for each ingredient.

Yes. The bulb is slightly off the bottom due to the shape of the candy thermometer. But the metal base of thermometer is in the bottom of the pan.

@@LauricesKitchen2010 Hi Laurice, I do hope you see this and reply back. I have been looking for this recipe for about 3 days now since my cousin ordered me 3 pieces from Coblentz Chocolates in OH. It was the best candy I have ever tasted! They call them Snappers though, so I had no idea what I was looking for. I have a couple of questions though. I do not have light cream or half and half. Can I use condensed milk? What can I substitute for the shortening also? Wish me luck in making these, for my arms do not work well - MS and muscular problems. Stirring is very difficult. Thank you for the recipe an d hopefully for the reply. Have a blessed Christmas and new year.

@@daschundloverable Hi and thanks for watching. I have never tried this with condensed milk before, but I suspect it should work fine. And you can just omit the shortening in the chocolate. It’s there to keep the melted chocolate smooth. This Christmas, I’ve been making these in an 11 x15” jelly roll pan and cutting the candy into squares. It’s much less tedious. And you only need to stir a few times during the cooking process and it’s very easy to stir. Best of luck in making these candies. Caramel consistency is a logistics dilemma: soft enough to bite easily, and it goes all over when you're trying to make these; slightly firmer, and its difficult to eat on camera. At the time I would have been glad for the silicone candy molds that are so readily available now. I would have dropped the caramel temp three or four degrees for a softer finished product. She’s on the counter sitting quietly for only a few seconds while I’m getting ready to apply the caramel. That is an adjustable measuring cup by OXO. It comes in 1 cup and 2 cup measures and should be available online or in stores that sell OXO products like Target and bed bath and Beyond. I have both and I use them all the time. SMH people are really worried about the wrong things. I’m pretty sure everyone clicked on this video to find out how to make the clusters. The cat on the counter has nothing to do with you learning how to make them. It could have been 1,000 cats on the counter and that still has nothing to do with the recipe. Either you make them or you don’t.

I have 15 cats. They come in and out as they please. I never see them on my cabinets, but if I did I wouldn't freak out. Your house looks spotless. I'm sure you have disinfectant, they don't have to eat your food, just watch and learn, and they don't even have to watch!

Great recipe. The first batch was too hard and a loss. The caramel was hard as a brick and was cooked to 242°F, however the altitude I learned plays a factor in making candy. With an adjustment to the cooking temperature to 232°F based on my altitude the caramel turned out perfect. At sea level 242°F may be the ideal setting for this recipe but if you don't live at sea level you have to make adjustment to the cooking temperature. Quick note to my fellow candy makers, test your candy thermometer in a pot of boiling water. Water boils at 212°F at sea level. If your thermometer shows a lower temperature than subtract that number from 212°F and use that number to subtract from the 242°F.

Thank you for the information. 😁 I knew baked goods were subject to altitude adjustments, but hadn’t realized candy had the same issues. I have been making these in a sheet and cutting them into squares so it’s not as tedious and I think I lowered the temp by two degrees so they were a bit softer still. @@jesswithdakids5172 I notice your pic is a dog. Many people think having a dog anywhere in the house is unsanitary and nasty. Would you agree with their assessment? Neither do I. We have 6 cats and 2 dogs. The particular cat in this video passed away in my arms last year, the day after Valentine's day. Being able to see her regularly in my videos is a sweet reminder of her time with us. It's absurd to criticize other people's private choices that neither directly affect you or anyone else for that matter.

@@LauricesKitchen2010 It’s unsanitary and nasty to have any animal on the kitchen counter🤮😩I do have a fur baby but he also has boundaries when it comes to the kitchen. Sad she passed away but it doesn’t change the fact that animals don’t belong on the kitchen counter ESPECIALLY when you are preparing food. It’s absurd to have a video on a social platform and think people aren’t going to give THEIR opinion for what you are choosing to put out for them to view. None of us are going to eat these turtles and that’s very CLEAR but doesn’t change the fact of my opinion on the video.

@@jesswithdakids5172 animals don't belong on your counter, perhaps, but they are welcome on mine. The difference is that I'm not telling you to allow them on your counter as our opinions differ. This is a video recipe not a storefront. Why stop with the cat? I touch the food with my bare hands, don't wear a hair net and as far as the video is concerned, never wash my hands or wipe the counter. The absurdity here is foisting your opinions on me.

Yes. We have many cats and they are all fed on the counter so the dogs don’t get their food. And I only have a fake business. One can only guess the vile things you do in the privacy of your own home that “The Board of Health” would not approve of in a public business. 🙄

A few dessert chefs have suggested using dipping chocolate (essentially chocolate-flavored candy) in lieu of actual chocolate. You dont have to worry about the chocolate "blooming" and the flavor is the same. Thanks for watching and commenting. 😊

Those are OXO’s adjustable measuring cups and can be purchased wherever you can buy other OXO products. I think these came from Target, but Amazon certainly has them. They come in one and two-cup sizes. Thanks for watching. 🙂

I made this today and it was a complete failure. The temp of 242 degrees took about 15 minutes but you said it would take close to an hour so I went with that. By the time I was half way done with putting the caramel on the pecans the caramel was as hard as a rock. You might want to redo this recipe. I was sooo bummed of my turtles.

I’m sorry this didn’t work out for you. The burner temp should be in the medium low range. I’ve made these dozens of times and it’s never taken less than 45 minutes to come to temp. Always use the temperature for candy making since that determines what the sugars do when they cool. I do have a pan version of these candies (salted caramel pecan squares which are much less tedious if you want to try again), but you’re in the same boat with the caramel. Don’t give up; they’re so good. 😊 Happy new year.

The recipe is blow the credits in the description box, but it is a double recipe. I don’t know how many cups it is since brown sugar is usually packed. You should be able to buy a 1 pound bag of it though. I do have a less tedious version of these: salted caramel pecans squares if you’re interested. Merry Christmas. 🎄

@@amberscott378 We have six cats and three dogs currently. The likelihood of pet hair in our food and drink is approaching 100%. But I will happily take pet fur in my food over hepatitis A, ecoli, salmonella, listeria, cholera and all the other human vector diseases out there.

1. That sounds delicious. 2. I have never tried it, but it might work best if you chopped the nuts and mixed them in after the caramel came to temp, them poured it over the prebaked crust. I have no idea if you need to make more than one 9x13 inch crust. I recommend trying it now and letting me know how it worked out. 😁😋 Although, I should probably try this too. Yum! 😊

She won't get on the counter ever again. She passed away February 15th of this year, in my arms. Cat and dog hair is everywhere, no matter where the cats go or don't go.

I think 234-236°F would be good for apples. But you may need to keep it warm or have people helping dip them. I’d also let the apples come to room temp before you start this whole process.

Your the only recipe I’ve seen thus far that has used caramel as well. Is it possible to dip the whole clusters in the chocolate once the caramel has set ? I would like for both sides to be covered in the chocolate. Also I bust out laughing when you put the cluster in your mouth. Wasn’t expecting it but was pleasantly surprise. 😂😆

😁 I too have contemplated dipping them. You should be fine dipping the whole thing once it's set. I would set them on a cooling rack to allow excess chocolate to drip off. Trying to bite into, and then chew caramel on camera is pretty bad. 😂 I chose the smallest one I could find. Thanks for watching and commenting.

We make several pans of these at Christmas. I’ve got an easier sheet pan version that isn’t so time consuming. It’s called Salted Caramel Pecan Squares if you are interested. ☺️

That is OXO’s adjustable measuring cup. You can get them anywhere OXO products are sold. They come in 1 and 2 cup sizes. I believe I have a pinned comment with the link in there.

Thanks for the recipe but can I ask if it would be easier to stir the pecans in the caramel sauce and then drop them on the parchment lined baking sheet?

You certainly can do that. I don't know how quickly the caramel will set up once you stir in the pecans, but I know you'll need to work quickly. I would cook the caramel 3-4 degrees cooler if you want to stir in the nuts. It won't be quite the same candy, but delicious nonetheless. Happy new year!! 🙂

1. I love the cat and see no problem with her being where she is because it’s your house, not everyone who’s sitting here crying about how she shouldn’t be there, smh. 2. I made these and my caramel got super hard. How do I prevent this? Would adding water help it stay soft?

I didn’t make my own caramel, I used already made caramels.

@@aly7553 if you're using premade caramels, try adding milk rather than water. I think the water will just make the caramel grainy rather than smooth. Also, just heat the caramel enough to melt it. The microwave might be easiest, then stir in milk, a tablespoon at a time until the caramel pourable, but not runny. At room temp, it should still be soft. I've never made these with premade caramel so I cant give you an exact amount on the milk, but my guess is 3-4 tablespoons for a 12 ounce bag of caramels. And thanks for the comment on the cat. She passed away in my arms Feb 15th and it's always a treat to see her again in these videos. Merry Christmas and happy new year!! 😊🎄🍾

Hi Laurice! I think you have the best video and recipe for making pecan turtles on RU-vid. I have recently mastered making the caramel, pouring it into a pan, and then cutting it into squares. I would like to use the caramel as you are, for turtles. But I am afraid, very afraid. Do you really have enough time to scoop the caramel onto the nuts without it hardening in your pan? It seems to set up so fast. I'm just looking for a little reassurance. Thank you for your time.

We did make this entire recipe on camera without any editing tricks. So yes, it is possible to scoop them all out without the caramel setting up. 🙂 But lately I’ve been making these as an entire pan and cutting the finished turtles into squares to give away. I made five pans of candy last Christmas and it certainly saved my sanity. I’ve included the link to that video if you’d like to see how we did it. @@peggytodd1917 yes. We’re no strangers to loss. 🤗We just put one of her brothers down on Wednesday. He had cancer. It’s tough to watch them grow from tiny 4 day old babies to feisty cats to elderly sick cats declining with age and disease, but I wouldn’t trade any of it in. And we always have room in our hearts for more. 💜💜

I stored them in my tummy. 😁 Like all candy, store at room temp in an airtight container. If you need to keep them for longer than 2 weeks, vacuum seal and freeze. Bring them to room temp inside the bag before opening to avoid condensation forming directly on the chocolate. I don't recommend ziplock bags for freezer storage since they aren't really airtight, although they should be fine for a month before you get noticable freezer burn. Ours have never lasted long enough for storage. Thanks for watching and commenting. 🙂

It’s not really a silly question except that these have never lasted more than a couple of days. 😋 They can be stored in any airtight container at room temperature with parchment paper between layers of candy or they stick together. They will last for weeks, but the chocolate will eventually bloom and the nuts will go stale. They’re still fine to eat, but the taste won’t be fresh and the candy may look less appealing. I will probably make them both!! 😂 I was wondering about their “shelf life” because I love to cook and give goodies to friends and family. I’m from Mississippi so pecans are my love language. Turtles are my favorite candy but I’ve never made many candies. I will definitely get my feet wet with these!

I didn’t even see the cat! Now I’m going back in the video to try and find him. I don’t think the commenters are necessarily cat haters. I love cats, and have two Birman of my own but they are not allowed on the kitchen counters. Not because of their hair, but because of where their paws have been. You can pick up some nasties making you really ill, but not being critical, to each their own. As you said, Your house, your rules. Still, I wouldn’t have pointed it out.
