That fried egg with the oil and crispy brown edges is EXACTLY how I love my fried eggs, especially with white rice and a Vietnamese style fried pork chop. As for scrambled, I do a variation of Ramsey's style (I skip the cream) where I cook it in a pot with a big dollop of butter and stir it on the heat and don't salt and pepper it until after I take it off the heat. As for poached, the first time I tried, I was using Julia Child's recipe which called for vinegar, and I'm glad Carla found the vinegar to be useless unless you put so much in that your egg will get that taste. When I want to do the "French" omelette, and I don't wanna get fancy, I do what Julia Child does. High heat with butter, put the whisked eggs on the pan and do the pulling the pan towards you method to get the egg to naturally shake itself in an Omelette form. Takes like 10 seconds.

meggy magoo you can’t even taste it on the egg. It’s not a big enough quantity and the taste of the egg overcomes the taste of the vinegar. I always cook my poached eggs in water with a tablespoon of vinegar.

I think he was referring more to the scrambled egg part, not denouncing Carla as a whole. All chefs do scrambled eggs a little bit differently. She stated that she was going for larger curds, not smaller ones. Gordon Ramsay does smaller curds over low heat very slowly, almost like a risotto. He also doesn't salt until he's already started cooking the eggs so they won't separate but she mentioned that in the video. Just different techniques, not implying she's a bad chef.

The scrambled though I like making it golden aswell and the omelette, Im weird 😂👏🏻 it has to be well done for me and the poached and the hard boiled eggs are a no ..... cause they are cooked.

Or you can fry eggs with butter without burning in a cast iron skillet, once you get it well seasoned. I've had good luck with an old skillet -- I mean literally a 60-70 year old Griswold skillet I got off ebay. A lot of the cast iron skillets made today have a more coarse, pitted surface (didn't work as well fo rme).

Yeah, but at the same time it makes her tips disingenuous. She told us a few tips and said not to use vinegar and then proceeded to fail at making a poached egg 75% of the time, making her advice worthless; I have could achieve the same results without having ever watched this video. Vinegar helps more than you think as well. Seriously, when I use vinegar my success rate skyrockets (currently 100% success) and you can't taste the vinegar, especially with toast/baked beans/sauce...etc.

I want so badly to like runny scrambled eggs and omelets... but I will NEVER understand how anyone likes eggs that spectacularly under-cooked. I know it's the "right" way to do it, but if you're beating eggs they should be COOKED. "Dog drool"????? Neither the name, the texture, nor the presentation are in any way appetizing.

Nothing beats a runny egg yolk in my opinion. The satisfaction of cutting into an egg and the yolk runs is unbeatable. Lol

Fantastic video. Carla has a great personality, is so fun, and is informative without being overly serious. I especially loved the simple poached egg method using no vinegar. I'm also going to get a cheap squeeze bottle for my olive oil (no more slippery oil running down the side of my big bottle). I'm still going to add a teaspoon or so of water to my scrambled eggs (as other chefs recommend) to add fluffiness. Well done.

it definitely is the swiss chard greens! the stalk needs longer to cook, so she tossed that in first before adding the leafy parts

I love that Carla leaves in the cracked omelette because isnt that how most omelettes come out anyway. I run around the house showing everyone the pan if I get it to flip over without the inside seeping out of the folded part. A good nonstick pan is a godsend in these cases but timing and a good ear all play a role. I love the realness.

On the handful of videos I've seen about it, straining the egg prevents all the stringy bits from floating around in the water as you poach. I think it more accurately reduces the stringy bits, but they're still floating (as seen in this video).
@lepi9577
@lepi9577 6 лет назад
In the egg, there's a part of the white that's runnier than the rest and doesn't stick well to the yolk. The fresher your egg, the less of that there's gonna be. When you poach an egg, the runnier part is the part that becomes wispy and gross. Straining the egg lets the runny part separate!

She didn't say it, but unlike the scrambled eggs, a classic French omelette requires quite high heat. The entire thing should be cooked in around 60 seconds.
@WormyLeWorm
@WormyLeWorm 6 лет назад
Yeah. I think this very slow and even more plastic-looking-result technique is a more modern take due to the popularity of nonstick pans and that it has less room for error; you simply cannot do it that way (it will stick if the heat is that low) in an iron/carbon steel pan which was the only way. I do think the latter has a more delicate or perhaps richer taste, but a skillful hand can make something just as mindblowing with the right heat control, and much quicker. They're slightly different tastes, and different skills. Personally I prefer doing it the fast traditional way because I love the results I get in carbon steel, and the flashiness of the skill.
@natashaheines6960

Yeah I think that was my one criticism of the video is she didn't always say what level the heat should be for all of them.

I found 4 med or 3 large eggs, beaten, salted, and left to sit for 10 mins, before heating them on on low heat (less than 100°C) for 5 mins with constant stirring, then cranking the heat up and vigorously stiring, makes the perfect omlette for me. The low heat slow stir makes it very creamy, and the higher heat fast stir finishes it up. Its not a complicated technique and it makes amazingly creamy scrambled eggs.
@LouiWoodman
@LouiWoodman 5 лет назад
My mother used to always make me poached eggs and it really is easy once you get the technique and timing down. A beautiful runny yoke soaking into a slice of toast perfectly balancing its self on the line between crunchy and delicate. Amazing texture and maginificient yet simple flavor.
