Dr Paul Mason is a credentialed Sports and Exercise Medicine Physician, having obtained his medical degree with honors from the University of Sydney. He also holds degrees in Physiotherapy and Occupational Health. Dr Mason has long experience with low carbohydrate and ketogenic diets, both personally and professionally. He has utilised ketogenic diets successfully both in the general public and for elite athletes.
He has spent an enormous amount of time understanding nutrition research, and is not afraid to diverge from conventional wisdom when dictated by the available evidence. This includes challenging many of the pillars of contemporary dietary advice, including on fat, salt and fibre intake. His most recent interest is the impact of diet on autoimmune conditions.

I went from vegetarian ( 25 years ) , to keto ( 2 years) to carnivore ( 6 months) back to keto... . I was so sick being a vegetarian. I am 53 years old now and I feel so much better and very active. I eat meat every day, grass fed, fish, eggs... thank you for the video,

Same here, I'm just older, exactly around 25+ years vegetarian, before for short vegan (experience was unbearable), being on low fats high carbs ruined my health and I did not know why as I was eating supposedly healthy. I was not, I know now. 4 years on keto, close to 1 year now on carnivore. Never felt better. And it is not only about feeling which can be subjective, all my labs are perfect now, CAC score zero, .... Keto/carnivore 4ever. :-)

Dr Mason, this is life changing, it's the key to the puzzle for me I believe, thank you for sharing this information. I'm the keto person who initially lost weight, then regained it all. I know the science is sound, but the missing piece was the lectins stimulating insulin like crazy... Now Carnivore, gradually over these two years, I slowly add bits and pieces to my puzzle, and when I am 95-100% strict is when the big changes are happening. No more capsicum or chilli for me, and potato has always been my nemesis, now I know why.

I do coffee enemas for pain and liver detox. I take no drugs and I am trying hard to recover ! Your tux give me hope I’m going from keto to carnivore for starting today after a 36 hour fast!. Any other talks on arthritis and over autoimmune disease would be helpful thank you again you’re making a big difference❤️

Vivian Roberts wife I forgot to mention I take CBD oil it’s safe my life is swelling went down quickly the pain decreased but now it’s moving to other places still in pain but CBD helps so much you may want to look into it for patients. 👍Thank you

Beer works great for my body integrity, on the matter of using grains, with other choices available as my staples. Sincerely, I'm not joking. I don't abuse beer. I don't abuse food. I live for body integrity. I don't consume as habit. I consume as what keeps my body prime, per as my body indicates, and reveals,… results.

Àmber I've watched a lot of your RU-vid videos. I wanted to thankyou for putting them on here. I have tried your version of the carnivore diet. I am pleased to say it's worked tremendously well. I am type 2 struggling for many years . Realise that I must be allergic to carbohydrates because I find my blood sugar after 8 weeks within normal limits. I am going to test soon for insulin response. I had a very high hbA1c and need a good few months to see if I've got that down. My lipids aren't good but I am in a better place so thanks for taking the time and energy and putting the conference together. I have treatment for depression but kind of feel better about too Your brilliant thanks again Colin Lyne

I’ve been doing Keto - low carb and high fat, beginning to learn I need to move to no carb and no plant carnivore diet - really enjoying the health benefits of Keto, might try the carnivores diet for a month and see what happens.

## 2:00 Lectins 9 children ate soaked but unboiled kidney beans : all of them got diarrhea & vomiting, even one who ate only 4. Kills rats in other studies. >100 plant sources of lectin Bind to carbohydrate moiety, so bind to our cells Lectins are resistant to cooking. You need to soak them too. Resistant to our digestive enzymes. Lot of lectins provide no nutritional value. Lectins can bind to the intestinal membrane which has a carbohydrate component, and damage it, causing leaky gut. 7:00 Study chart : amount of peanut lectin within their blood after peanut intake Then lectins can bind to cells in different organs. We select plants for their resistance to pesticide, and that resistance comes from lectins. 8:35 lectins stimulates the insulin receptor. Insuline : hormone stimulating fat storage. 9:09 Chart Insuline vs Insuline + Lectins vs Lectin effects on quantity of glucose converted to lipids 9:45 lectin also impacts leptin Leptin : hormone essential in regulating appetite, satiety and energy balance. Mice loose weight under lectin-free diet. 10:45 Lectins cause Reflux Reflux : stomach acid ascending up the oesophagus Lectins can stimulate Histamine, and this leads to acid production in the stomach. 12:45 Parkinson Disease Lectins can travel along the vagus nerve up to the neurons in the brain. 13:56 Study chart : by cutting the vagus nerve, the risk of developing Parkinson's dropped by 47%. ## 14:33 autoimmune disease - The body attacks its own tissues. - Antibodies have receptors that bind to healthy cells, which leads to destruction of healthy tissues - leaky gut is a key contributor to autoimmune disease - 80% of protein in wheat is gluten 17:14 graph of the intestinal barrier blue : not exposed to gluten red : exposed to gluten up : non-celiac cells down : celiac cells 18:40 Gluten in the system 23:15 chart showing keto diet increase the proportion of anti-inflammatory lipopolysaccharides. 23:38 Studies on Diabetes - chart of maternal gluten intake & type 1 diabeties in offspring - remission of diabetes with gluten-free diet - Diabetes is mainly auto-immune 27:45 Inflammatory Bowel Disease increases the risks of 23 other conditions. ## 27:00 Leaky Guts 27:55 factors increasing intestinal permeability : - Alcohol - 29:00 emulsifyers - 31:00 polyethylene glycol - 32:45 pesticides -> loss of tight junctions - small particles (PM10) - Plastic (BPA replaced by BPS which hasn't been tested but probably same effect) 35:40 factors decreasing intestinal permeability : - fat improves the function of the mucus layer (>10x) - 36:10 glutamane : main fuel source of the intestinal cells. - lectins + sugar/glutamane (will serve as a decoy) - phosphatidylcholine - bacteria like lactobacillus plantarum 41:14 Dairy A1 and A2 protein - A1 lead to the formation of a peptide, BCM7, which has the ability to bind to opiate receptors in the brain and cause intestinal inflammation. - Studies comparing A1 and A2 milks : elimination of A1 leads to reduction in systemic inflammation and improvements in cognitive performance 44:00 Study where participants cut out all lectins, 11/14 experienced remission of inflammation within 6 weeks.

Wow every time I cook chilli I put kidney beans and every time I eat chilli I get nauseated and feel horrible . now I know why it must be the beans ! Wow been trying to switch to keto-carnivore past 3 weeks so far doing good .

Egg yolk lecithin is fine for those who are not sensitive to eggs due do disrupted gut barrier. In that case, sunflower lecithin is a good alternative.

Thank you. I take so much l-glutamine. Only between 12-18 grams a day as I feel I need, undirected from docotrs healing my leaky gut and now I believe candida. I may be a good study, l-glutamine has really turned my life around even from vestibular migraines. I can attest to how much l-glutamine has helped my mucus even in my mouth.

I have lupus and Rheumatoid Arthritis and have switched to a vegetarian diet. I’m currently doing some research on this diet because I’m still experiencing some health problems

Uncooked or partially-cooked red kidney beans: important to the plot of a Dick Francis thriller novel (Dead Heat, I think): a chef has an important catered meal sabotaged by an employee adulterating the food that way. Of course Francis and his wife (who shared in the writing and did much of the research) would have heard about the case of the schoolboys and its aftermath.

Yeah, remember butter is just milk but with a ton more fat, and naturally milk dosen't have a whole lot of lectins. So you'll be fine unless you're extremly sensitive to lectins.

@@CatWoman6 hi, I have not all answers... But somebody in RU-vid said to me to buy Allergoval. I try now. And look for histamin products list in Google, and avoid them. Eat only fresh and fresh prepared food. Try one day to not to eat and taste some product. If your body reacts, avoid this product.

Kevin Aaron Thankyou!.. i think of meat or bone broth sits in fridge then histamine increases but if you freeze it and cook straight away it's better. Long cooked Bone broth has higher histamine. Overall I find red meat to be the least allergenic of all foods. Lots of people healing with carnivore diet.

histamine usually comes from allergic reaction. The amount of histamine in any food itself is negligible.

In japan they ate tons of seafood and seaweed and a tiny amount of rice. If you ate a pound of rice a day plus some beans you will drop dead in a couple years tops as has happened to everyone who's tried lol

I fasted 2and half days, did hour work out lifting. Checked my blood sugar it went up from yesterday. 115 yesterday 159 today. How ?

Glucose spikes under stress. Checking it after a workout would result in an elevated fasting glucose score.

Hi @ Jason Moyer, I'm a type 1 & have found thru my endo clinic that our liver actually stores LOTS of glucose (as well as toxins). If you detox, fast and/or exercise too quickly our liver releases everything stored in a gush. Also, your liver can eventually save you in the same manner if too much insulin causes lows (eventually after cleaning up your system, the liver won't have as much stored). Hope that makes sense.

Dawn effect, it's normal. You just have more liver fat to lose. Eventually your dawn effect will go down as you get healthier (get rid of liver fat)
