Nothing beforehand, just make sure your fish is very fresh and clean. Choose your fish as you would for sushi.

That looks good! Was imagining Carpaccio to be thinly sliced pieces of fish or meat(that can be eaten raw) Never thought about doing it this way. ru-vid.com/video/%D0%B2%D0%B8%D0%B4%D0%B5%D0%BE-LBdu9gk7drE.html is preparing it the same way.

Yes, it's a great technique! Although it only works with firm-fleshed fish, such as seabass or dorade.

Lemon vinaigrette. Lemon juice emulsified with oil, honey and a little sugar. 👨‍🍳

@@BelAge This is not the classic way of making fish carpaccio. But personally I think it tastes amazing. I made this video last spring, and we used some foraged herbs (oxilise or wild sorrel) which as a strong lemon flavour as well. Its a really neat technique, if you are a carpaccio fan, give this a try sometime! If you have any further questions just let me know👍
