This delicious sweet sour and spicy pickle is served as the first course in a traditional wedding feast. It is easy to make and has a long shelf life.
Ingredients
500g carrots
300ml + 100ml vinegar
400g jaggery powder (or sugar)
1 tablespoon ginger-garlic paste
7 cloves garlic (optional)
7 apricots (or figs)
5 dry dates (kharak)
¼ cup black raisins
coarsely powdered Black spices (3 cardamoms, 1" piece of cinnamon, 7 cloves, 7 black peppercorns)
2 tablespoons chilli powder (or to taste)
1 tsp salt
