Carrot Cakes have always been a pretty boring dessert for me, so in this video I decided to take a boring carrot cake and level it up to be NOT BORING!
Written Recipe 👇🏻
For the Cake:
-3 cups of grated carrots
-2 cups of all-purpose flour
-1 cup of white sugar
-1 cup of brown sugar
-2 teaspoons of baking soda
-2 teaspoons of cinnamon
-1 and 1/4 cup of canola oil (or vegetable oil/avocado oil)
-4 whole eggs
-1 cup of pecans (chopped)
For the Orange Maple Frosting:
-6 tablespoons of unsalted butter
-Two 8-ounce packets of cream cheese
-1 teaspoon of orange zest
-2 teaspoons of orange juice
-2 teaspoons of brown sugar
-A pinch of salt
-8 tablespoons of maple syrup
-Orange food coloring (optional)
Instructions:
For the Cake:
-Peel and grate the carrots to get a total of 3 cups of grated carrots.
-In a bowl, combine the dry ingredients: all-purpose flour, white sugar, brown sugar, baking soda, and cinnamon. Whisk them together.
-In a separate bowl, combine the wet ingredients: canola oil and eggs. Mix well.
-Add the wet ingredients into the dry ingredients and mix until well combined to form the cake batter.
-Add in the grated carrots and the chopped pecans. Fold them into the batter gently.
-Preheat the oven to 350°F (175°C).
-Pour the batter into two 7-inch baking pans, distributing it evenly.
-Bake in the preheated oven for about 30 to 40 minutes or until a toothpick inserted comes out clean. If after 30 minutes the cake is still wobbly, bake for an additional 5-10 minutes.
-Once done, remove from the oven and allow them to cool on a wire rack.
For the Orange Maple Frosting:
-In a mixing bowl, combine unsalted butter and cream cheese. Whip until it becomes fluffier and lighter in color.
-Add in the orange zest, orange juice, brown sugar, salt, and maple syrup. Mix until well combined.
-If desired, add a few drops of orange food coloring for added color. Mix -until evenly distributed.
-Refrigerate the frosting for at least 10 minutes before using it.
Assembly:
-Once the cakes have cooled, place one cake on a cake board or serving plate.
-Spread a layer of the orange maple frosting on top.
-Place the second cake on top and press gently to adhere.
-Frost the top layer of the stacked cake, making sure it's smooth since it's the visible part.
-Garnish the edges with additional chopped pecans, if desired.
Slice, serve, and enjoy!
