As a teen, I'd leave butter out on the counter before baking and while I'm away my dad would get mad that someone left the butter out and put it back in the fridge.
Hi I tried this recipe the other day and it turned out SO GOOD!!! I changed the spices a little bit, I did 1/4 tsp ginger,1/4 tsp nutmeg, and 1/4 tsp cinnamon. For the cream cheese frosting mine turned out pretty liquidy so I put it in the fridge and then it was fine. I would definitely recommend this recipe for anyone!!! ( I am under 11 years old and it was really easy!!!)
from my experience, over whipping cream cheese makes it soupy, so best to cream sugar and butter until light and fluffy, and then add the room temp cream cheese and mix for only a minute or less, until combined. Works every time!

Shredded Carrots 226g / 2 cups Toast pecans oven, cool, chop @ 350F for 10 mins, toss @ 5 min mark Pre-heat oven to 375F(190C) DRY Plain Flour 150g 1 tsp salt 1 tsp baking soda 1 tsp baking powder 1/4 tsp cinnamon 1/4 tsp ginger 1/4 tsp cardamom 1/4 tsp all spice Sift and whisk to combine WET - room temp 1/3 cup veg oil (80ml) 1/3 cup sour cream 1/3 cup apple sauce 1/2 cup granulated sugar 1/3 cup brown sugar 1 tsp vanilla 2 eggs Mash/Whisk to combine ASSEMBLE Combine wet and dry mix Don't over mix Add carrots and 1.1/2 cups pecans Fold, don't overfold BAKE Fill 3/4 cupcake papers Bake in oven 375F(190C) for 5 mins Change to 350F(177C) for 12 mins CREAM CHEESE ICING - room temp Butter 113g Cream cheese 226g Mix butter and cream cheese and add a pinch of salt Scrap sides of bowl and mix again Add 1.3/4 cups of icing sugar Mix on low or by hand to combine Mix on low Drizzle 1 tsp vanilla Mix on medium Scrap sides and Mix again When cupcakes have cooled, start frosting

I just made these, and let me tell you, they were incredibly soft and moist and had no oil whatsoever! The taste was incredible as well! My whole family enjoyed it and gave many compliments, and wanted me to make more!

I made these with paleo flour and I have to say they tasted amazing. I have never added cardamom and allspice usually just cinnamon, ginger, ginger. That made all the difference it added a warmth and took the spice cake to an entirely new level. Awesome :)

Oh my goodness I made these, followed your instructions exactly, and they turned out AMAZING! I did fill them with caramel too. I did one with walnuts and brown sugar cream cheese frosting, and one with pecans and regular frosting, and then I made little marshmallow fondant carrots to put on top! They are so moist and flavorful!

I just made these for the first time, not knowing if I would create a disaster in the kitchen, but to my surprise, it came out perfect Easy to put together once you have everything in front of you. . I cannot believe how soft, light, fluffy, and moist these cupcakes are. Your not kidding when you said the sour cream and apple sauce would add moisture to this. Also surprised snce no butter is in this thing. Absolutely love it. I would be making more of these instead of muffins. Since this was my first time, I did not go for the frosting part, but will next time, and I did not use the cupcake cups. I like how they brown on the sides without the cupcake cup. Great job demonstrating and making it look easy.
I love this recipe and want to make it this week, BUT...the recipe at your link is different than in the video! There's more oil and less applesauce on your website, and the spices are different. Help!

OMG! These are amazing. Thanks for the recipe. I omitted the brown sugar and used only about 93g of raw cane turbinado sugar. It worked well for us. Also, I didn't have any all spice, but I added 1/4 tsp of ground clove and about 1/8 tsp freshly ground black pepper. We all love it.
How much confectioners sugar did you put? I’m confused because what is said and what is written are different. Also, did you add the Apple sauce? Don’t suppose you know a substitute? 😬

I just made these cupcakes for my MIL’s birthday and they were a hit! I got comments on how moist and soft they are. I used the applesauce & sourcream method, and actually puréed the shredded carrots with some more apple sauce in the food processor because I made the mistake of shredding it through the large holes first and needed to break them down more. This is the only carrot cake cupcake recipe you’ll ever need!
I just made this recipe and kitchen smells amazing. Haven’t try them yet, FYI the recipe amounts on the link call for 3/4 cups of vegetable oil. I’m glad I was watching the video at the same time and caught the error before I mixed my dried ingredients. Made the wet ingredients again with just 1/3 cup of vegetable oil + sour cream + apple sauce. Can’t wait to try them 😍 thank you 🙏🏽

Nursing a knuckle scrape right now! I was shredding cold butter (...okay, frozen solid butter); I got about three tablespoons in and 💥 it was over. I cut it up into chunks and made my pie dough in the food processor instead!
absolutely divine! i used buttermilk in place of the sour cream. my frosting came out very stiff, so i loosened it with 1/4 cup heavy cream. tasty as heck!
I couldn't get apple sauce or sour cream in my area so I grated some apples instead and added 1and half tbsp of full cream. Didn't get walnuts either so I substituted it for a mixture of cashew nuts and almond. I added a pinch of nutmeg too. It was delicious. Thanks John

Made these today and they were delicious!! One thing to add though, the attached recipe does differ a bit from the video. Certain measurements are different and there are different ingredients too. Biggest change was that in the recipe, it calls for 6 cups of powdered sugar for the frosting while you say 1 and 3/4 cup in the video. I had plenty of frosting left over just by using the 1 3/4 cup. I just followed the video and it turned out great!

Made these cupcakes today and it turned out amazing. Personally, I don't prefer much sweet so I only added the 100g white sugar as given in the recipie and did not add any brown sugar. (Also because I didn't have any 🤭). I love the amount of sweetness I got. As for the spices I used ginger, cinnamon, gharam masala 1/4tsp each and a pinch of pepper. Thanks a lot for this wonderful recipie. Just watching your videos bring much joy. My husband and I both looooovvveeed these cupcakes.

I add a quarter teaspoon of freshly ground nutmeg in my carrot cake or 1/8 clove, similar to making like pumpkin pie, I just love my carrot cake with lots of spices with a hint of sweet
It warms my heart when you’re using sour cream! I’m Russian and sour cream is a pillar of our cuisine - it’s a bit sad that’s it’s rarely used in Europe and US. Sour cream is delicious! You can just whip it with sugar and get a delicious cream!

I've grated my knuckles countless times; please, define a "good" vanilla; I've never tried pineapple in a carrot cake (but YUM! I love substituting oil with applesauce and/or sour cream, but the idea of pineapple opens up all sorts of delicious possibilities!); and I think the carrots just eke out as my favorite decoration, as it is something that makes me think of spring! (My husband planted our carrots today. Just a few...too many...months now! 😂) Did I forget anything? I think just to say, "You're amazing!" 💕

Friendly word of advice. The small measuring cups you’re using are actually inaccurate for liquids. Try pouring them in a 2 cup Pyrex one meant for liquids and you’ll see a difference.

I love watching your videos, your recipes are always amazing! I use pure pumpkin instead of the sour cream and applesauce. I also add in some nutmeg and I put a full tsp-ish of cinnamon because I love a spicy cake. Another thing I have done is add some orange zest in with the cream cheese frosting giving it a bit of a kick. It’s soooo yummy. 😊😊
