I'm late finding this, so it may not be seen, but at 2:14, for about 4 seconds is that a bit of Paganini that he slips in, maybe from Caprice #5 or maybe 12? Or is that just the way the piece is always played? I'm guessing this young man has classical, as well as bluegrass fiddle training.

Yes, a 5 string has a "C" string to add extra pitch. Usually the strings are "G" "D " " A" and "E". Supposedly it allows for more improvisation so a lot of country\bluegrass fiddlers favor them.
