About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the RU-vid channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via RU-vid videos, her cookbook, and cooking classes. She currently lives in Vancouver, and goes to Thailand every year to visit her family. Visit her at hot-thai-kitche...

I doubled the sauce and added 3tbsp chicken stock. Marinated the chicken in soy sauce, mirin, cornstarch, baking soda and black pepper. And added fresh ginger to the garlic. Excellent!!! Thank you for the recipe!

We have been looking around for some authentic Thai cooking help, this is an awesome video and she explains the Chinese influence, we see Cashew chicken in Chinese restaurants, but it is not anywhere close to the real Thai dishes. The authentic way we have found in Thailand is a breaded/floured deep fried chicken to start with. I followed the recipe exactly and bought the right chilli paste and it was just like the restaurant, the restaurant I go to that makes the best cashew chicken and haven't had cashew chicken in over a year because of the pandemic. So good thanks for the amazing recipe.

I have made this several times and this last time, I am still surprised on how dang good it is. I did adopt Cici’s routine (another cooking RU-vidr I follow) of adding egg white to the protein soak but still, this is a banger of a dish. I can’t believe I can make a meal this good.

Lol, you're welcome! Spilling food and making mistakes is a normal part of cooking...I do it all the time and it happens to even the best of chefs. It's more important to relax and have fun with cooking!

One of my absolute favorite dishes. Eat it all the time at restaurants in Thailand, but every restaurant seem to have their own recipe. Still never got served and did not like it :) Made my own recipe too, but your sauce seem interesting and I will see if I can find all the ingredients at my local thai shop here in Norway. Thank you very much for this recipe..Very delicious... opted for cayenne pepper... I made it and even tasted very tasty than one restaurant I ordered from. I made chicken cashew, chicken satay and peanut sauce and curry shrimp pineapple with coconut milk ... I love it all together and my family loved it. Thank you once again

Thankyou so much for giving the recepie in English. I'm a big fan of Thai cuisine and I'm from Mumbai, India. I followed exactly your methodology of cooking since all the ingredients you used are available in India as well and also the vegetables. Just that mountain sauce isn't there in our markets..Heard it for the first time...Hope if its absent it won't make much difference in the dish.

I love your channel, your cuisine, your book. For me, I avoid Synthesized-MSG. Natural MSG in mushrooms is sufficient. I just incorporate my mushrooms and the sauce so their interactions are in the hot pan.

Looks awesome, making this tomorrow night, I don't like water chestnuts much either! I never thought of putting oil in the old Kikkoman soy sauce bottle. I have a couple I Don't bother using for soy sauce. Made your Garlic Pepper Chicken last night, that was a great dish. I'll add that to my list that I'd serve to company :) Awesome website, and great videos, thank you.

Hi Pai, thanks for the recipe! Love the colorful host of ingredients. I didn't have chili paste, so I pounded 2 roasted bird's eye chilis and a little bit of lemongrass along with the garlic into a fine paste, which I fried with the onions. I also added a handful of Thai basil leaves at the end. The hint of lemongrass and the anise-like aroma of the basil added a very unique layer to the flavors of the sauces. :) Let me know what you think!

I live in Thailand, the way that paste is made is to fry shallots, garlic, dried chilli and dried small prawns and then pound into a paste

Very nice! , I'm going to make this. Time for you to get a nice carbon steel wok I think, so you can better toss the food, as standard frying pan just doesn't work with food flying everywhere, haha, but thank you, great recipe and very clear. Wok is much better for this type of stir frying. The problem with Wok at home is having a strong enough gas burner, most home cookers are not up to it.

No, they don't come fried. All you have to do is heat a bit of oil in a pan, medium to low heat, and let the chilies fry until they darken. Literally in seconds they'll be done.

I would make this again also recommend the recipe. I used boneless, skinless thighs and only a heaping tsp of chili paste. Just enough heat for our house. Was soo good. Will add more onion and red pepper.

Great dish, beautiful variety of colours and textures. Thanks for the fried, dried chilli tip; must try that one. I've lost interest in Golden Mountain sauce since they determined in contained high levels of carcinogens. Nice to see that unlike many Thais you don't add sugar to this dish:-) Oh... where's your wok?!

My purchase of a jar of Nam Prik Pao this Tuesday prolly constitutes the best 2 Euro 49 spent this year. If only for discovering that it would've been worth watching your channel. But then of course, there's so many more discoveries, delicious dishes, morsels of knowledge and insight, here. Thanks to you, my gai pad med mamuang himapam tonight was as good as any I had in Thailand! (And I always thought mamuang was mango, as in kao nieow mamuang ...)

Actually, yes mamuang is mango. But mamuang himapan is cashew I think the first time thai people see the cashew fruit as a kind of mango from fantasy forest (himapan - หิมพานต์ mean forest in thai/buddhist&hindu myth which is the host of many mythical creature)

"Med Mamuang Himapan" is quite a mouthful when compared to "cashew-nut". I'm sure there's a good story behind that etymolgy.

Hi Looks great ! question why wouldn't you pan toast the cashews before cooking this dish.. when i am in Thailand my chef that cooks for us always toast the cashews to get them to be more flavorful. L.A Rob

Hi Pai! i had this dish at a Thai restaurant yesterday and I loved it so I came to check if you have a recipe for it and walah! But the thing is they served it with more sauce/gravy so can you tell me how to make mine with more gravy? How many spoon should I add sauce wise xp

Can I also suggest another alternative name for this dish which I've seen in one book - "Phat Himalai". The author hints at this dish being popular in the north - hence the Chinese influence - and with robust flavours of onion and green onions (scallions), is a dish best served with plain steamed rice. "Himalai" is probably easier to say than "cashews" in Thai!!
