As a professional chef myself, I am an avid fan of you and your RU-vid videos and am impressed with Darrien's work in this episode. Big kudos to him on an excellent recipe from a retired chef that has stoked the "fires of hades" for 42 years and is still cooking. He's right! Cooking is a passion, but hey, so is fishing! I extend my fond hopes for continued success to you both!
Love watching dudes like this fish. Always a wholesome time with no wasted food. I know people are all “Don’t eat fish!” nowadays but these two make it so it’s never wasted or done with bad energy/ intentions.

Possible tip for that technique of gutting a fish (all in one go) that'll speed thing up and simplify the process. Here in New Zealand we have a really similar fish to a Striper called a Kahawai, so I'm presuming they're pretty similar anatomically on the inside too - by the looks of the Striper you cleaned in the video, they look to be. When I gut them, I make the exact same cuts you did up until 15:12 - though I don't worry too much about cutting into the guts. Then all I do is pull the belly flaps apart - which tears the gills away from the belly flaps. Then I put my fingers into the gills, and rip them away from the spine - all the guts come with it just like you demonstrated. It's a bit more brutal, ripping rather than cutting, but it saves having to do all those fiddly cuts to get the gills free. Love your videos dude.
