Summer marsh stuff at it's finest. Some bad weather and a complimentary flounder prize for dinner. Peddled through some back water and landed myself a 19" fish and change on a Gulp! shrimp and half ounce jighead. I worked a few deep cuts and banks and got chased off the water by more storms unfortunately.
Got back to house and filleted the fish. This prep was as follows -
1) Season fillets w/ Lemon Pepper
2) Coat with flour
3) Dip in egg
4) Coat with breadcrumbs (seasoned with garlic and onion)
5) Fry 2-3 minutes per side on high heat with adequate oil
Some fresh coleslaw (I didn't use vinegar - feel free) and rolls to top it off and you are done. Easy stuff and delicious!
