I'll share a simple yet delicious recipe for seared To'au fillets with a Thai coconut curry sauce. Consuming these invasive fish helps control their rapidly expanding populations while not allowing good protein to go to waste. Eradicating To'au and other highly invasive species is an ethical way to protect Hawaii's native plants and animals.
