This is really tasty. I have made it several times. However, personally, I never boil my vegetables but steam them. It is quicker and the moisture in the veg is kept to a minimum. It is a cheap and tasty supper.

Te sugiero que no cocines la coliflor en agua porque pierde nutrientes y puede que se pase de blanda, cocinándola al vapor puedes controlar mejor la cocción y que no se te pase.
That does look good! Never seen anyone grate tomato before! Just one teeny tip I learnt to pass on, use the back of the knife to scrape your board, that way you won’t blunt your knife.
Tomatoes are also grated in Spain add a little salt pepper and olive oil and rub garlic on toasted bread add the grated tomatoes and it’s a delicious breakfast or lunch or anytime snack!

This looks wonderful! I had a cauliflower last night but roasted it off and its was good but wish I had seen this first. My only change would be italian parsley for the cilantro. My friends love cilantro but it tastes soapy to me. So wonderful we have so many herbs to pick and choose from. Will be making this on the weekend. Will use a mix of mozzarella and smoked provolone. Nice recipe! To make this even more vegetarian (i.e. use no animal products at all), substitute the cheese with a soft tofu. Drain the tofu while the veggies are cooking in the pan and then add whatever flavoring you'd like to the tofu - nutritional yeast, salt & pepper, and/or the paprika and cumin which is already in the recipe. AFter baking, sprinkle some smoked paprika on top and top with something green like chopped cilantro, parsley, green onion and/or some mint for something different! Have fun with it.
