In the 330th chapter of my story, I make a super yummy and healthy gluten free, vegan mushroom soup and broccoli casserole with my dad! These recipes are from two books by Steven Gundry “The Energy Paradox” and “The Plant Paradox”:
Shockingly healthy broccoli casserole ingredients list from “The Energy Paradox”:
2 cups macadamia nuts, soaked overnight in water to cover
8 cups broccoli florets
1/4 cup olive oil, divided
1 onion, minced
1 cup finely minced mushrooms
1(14-ounce) can full-fat unsweetened coconut milk
1/2 cup Mushroom Broth
Juice of 1/2 lemon
1/4 cup nutritional yeast
1 teaspoon Dijon mustard
1 teaspoon onion powder
½ teaspoon ground black pepper
1 1/2 teaspoons iodized sea salt, divided
1 1/2 teaspoons avocado oil
1 cup crushed sweet potato or cassava chips
½ cup finely chopped walnuts
1 teaspoon finely minced fresh rosemary
“Raw” mushroom soup ingredients list from “The Plant Paradox”:
2 large handfuls of mushrooms with stems, approximately 2 ½ cups
1 cup water
½ cup raw walnuts (preferred), or ¼ cup almond butter or 1/4 cup hemp seed hearts
1 tablespoon dried minced onion, or 3 tablespoons chopped red onion
½ teaspoon sea salt, preferably iodized, or Himalayan salt
1/4 teaspoon cracked black pepper
2 sprigs fresh thyme leaves, or ½ teaspoon dried thyme
1 tablespoon truffle oil (optional)
