Why do you like or dislike challenges?

You missed the most important reason to issue and accept challenges: because it looks cool af. What has a better narrative impact than two generals locked in personal combat to the death?

Challenges will always have a special place in my heart. I play emperors children and a friend has iron warriors. Our first HH game saw 2 of his 3 sergeants killed by dueling and a third blow up his plasma pistol. I then Ran 20 marines into a Leviathan and found out why they are so tough when he killed 15 of them Easily one of the best warhammer games I’ve ever had and we’ve been hooked on HH since. I’m currently building an emperors children tank company to take the fight to his Company of bitter iron and another friends loyalist SoH

Reminds me of WHFB. Skaven had the SR "Leading from Behind" so they could refuse challenges with their expensive characters, go to the rear of the regiment and still use their Ld score for combat resolution while the unlucky regiment champion got butchered by your run-of-the-mill blender lord. Goblins could give their characters a "bomb" item which would trigger when they got killed hopefully either killing or seriously wounding the blender lord. Vampires and Chaos characters were notorious for being able to create the most dangerous characters. Everybody else would have a hard time going up against them unless they could pull some sort of shenanigan in their favour. Feeding a unit champion to the blender lord is only a valid tactic, if you also have a somewhat accomplished fighter on your side. So when the unit champion gets stomped and the combat resolution score becomes dire your killer wades into the opponent´s squad and may achieve even a similar result in regards to the score. Otherwise you just have to roll a very badly modified Ld roll to stay fighting regardless, if a challenge happened or not.

Chosen warrior may issue AND accept challenges.

Challenges are way too high risk for little reward. If there was a higher reward like +5 to combat resolution for winning or -3 for refusing you would see a lot more people accepting challenges with their good characters. Though that would make characters like Sigismund even more powerful.
