Ingredients:
2 cups of all-purpose flour
1 tablespoon of salt
3 tablespoons of vegetable oil, margarine, or butter
1 cup of warm water
Instructions:
i. In a mixing bowl, combine the flour and salt. Mix well to ensure the salt is evenly distributed.
ii. Add the vegetable oil, margarine, or butter to the flour mixture. Using your fingertips, rub the oil into the flour until it resembles coarse breadcrumbs.
iii. Slowly add the warm water, a little at a time, while kneading the dough. Continue kneading until you have a smooth and elastic dough. If the dough feels too dry, you can add a bit more water.
iv. Once the dough is well-kneaded, cover it with a damp cloth and let it rest for at least 30 minutes. This resting period allows the gluten to relax, resulting in softer chapatis.
v. After the dough has rested, divide it into 6 equal-sized balls. Roll each ball into a thin circle, using a rolling pin and a dusting of flour to prevent sticking.
Heat a skillet or tawa over medium-high heat. Place one rolled-out chapati onto the hot skillet and cook for about 1 minute, or until bubbles start to form on the surface.
vi. Flip the chapati over and cook for an additional minute, or until golden brown spots appear on the underside.
vii. Remove the chapati from the skillet and keep it warm in a clean kitchen towel while you cook the remaining chapatis.
vii. Serve your soft and layered chapatis hot, with your favorite curry or side dish.
