Bought for 198 cad at Wally, what a great little smoker/grill! Here I'm doing up some slow smoked back ribs for the first time. Turned out amazing!
For the dry rub, these are the basic ingredients I use for all my pork rubs:
2 Teaspoons or equal amounts of the following:
Kosher salt
Black pepper
Paprika
Onion Powder
Garlic Powder
Ground Mustard
You can use this rub as is or add brown sugar (about 1/4 cup) if you want more of a sweet taste, 1/4 teaspoon of Cayenne pepper if you want hot, or you can put both in to the rub like I did here.
The rub is always an experiment with what I have in the cupboard at the time, but I always use those first 6 ingredients as the base rub.

Have had our Akorn Jr for several years, use at home and take in the camper. I use a Lodge L8SKL 10.25" double loop handle pan for my deflector supported by a wire canning rack I got at Walmart. The cast iron pan is not fragile like a pizza stone, provides a great deal of thermal mass and catches drips or can hold moisture if desired. Another item I got is a Harbor Freight haulmaster 16x30 polypropylene cart which allows the grill to be moved around and elevates it to a good working height. Recommend also a cover to help prevent rust. Love our Akorn Jr!

I have my Akorn Jr. shipped to the Philippines and am loving it! It's funny because I have the exact same method for my deflector as you. I think my grill i use to set the deflector is 10.5 inches, but it fits fine. However, instead of a pizza stone. I am using a deflector made out of terracotta. My grill was super cheap at like $1.20 and the deflector cost me about $2.00. If I bought and shipped char-grillers deflector. it would cost me like $60 with shipping, no way I'm doing that. The only thing I don't like about the Akorn is they should just provide the deflector plate, it's needed if you buy this grill.

Do these Char Grillers hold the heat in the Canadian winter???
@thecanadiangrill1715
@thecanadiangrill1715 7 месяцев назад
Hi there! Yes, they do pretty well in the winter. I'm also in Canada. Grill temps are still high, as long as you don't leave the lid open for too long. Where these really shine is on cold WINDY days. My gas grill struggles to maintain grill temps and the flame will blow out when trying to grill on low. The Akorn Jr. is pretty well insulated and is (for the most part) wind proof!

When cooking at really low temperatures, I usually just fill the bowl up to the deflector plate and it lasts all day without having to add any charcoal. Hope this helps.

What’s the point of putting sauce on the bone side ?
@thecanadiangrill1715

So that the sauce is also on the meat between the bones.

Love this recipe and video! going to try on my new Akorn Jr soon, any chance you can post your rub recipe?
@thecanadiangrill1715
@thecanadiangrill1715 4 года назад
Thanks! I've found it useful to have some sort of heat deflector for controlling lower temps. I couldn't get the original "Jr Smokin Stone" where I am, so I'm using an 11" grate off amazon, and a dollar store pizza stone 9". I usually try out new rub recipes, but the base is nearly always the same. Equal parts of Kosher salt, black pepper, paprika, garlic powder, onion powder, and ground mustard. If you want some kick, add a pinch of Cayenne pepper. If you want it sweeter, add brown sugar. You can add both if you want. I'll post this to the video. Have fun!

Like the way you diffuse the heat. You can use unglazed quarry tiles in lieu of a pizza stone. Where did you get the grate that you set the stone on?
@thecanadiangrill1715
@thecanadiangrill1715 4 года назад
Hi. Heat deflector a must for smoking low and slow. The grate is an 11" grill/baking rack I found on amazon. www.amazon.ca/M-Aimee-Multi-Purpose-Stainless-Steaming-Barbecue/dp/B07J184L5N/ref=sr_1_4?keywords=M-Aimee%2Bbaking&qid=1589828190&s=kitchen&sr=1-4&th=1

@thecanadiangrill1715
@thecanadiangrill1715 3 года назад
Great question! I've found that you can use this BBQ any way you want. Low and slow or extremely hot searing, it will do both. Sure, leave the lid open BBQ as normal. I've had great success with chicken and steak like this even when it's really windy or cold outside. That's the great thing about it, the bowl is not affected by weather conditions so much as any regular open BBQ. Hope this helps

Is it worth buying or should i just save up another 100 bucks for the regular sized one?? I mainly wanna use it for brisket but not big brisket lol
@thecanadiangrill1715
@thecanadiangrill1715 4 года назад
Hey, it's worth it! Check out other comments from people who have them. There are two different larger Akorns. The next one up from this is not double walled, it's just a standard charcoal grill that looks similar. It's only about 100 bucks more than this one. The one that costs 200-300 more is Kamado style double-walled and sealed. I would have got that one, but my gas grill is large enough.

How much lump charcoal do you use?
@thecanadiangrill1715

If I had to guess, about 3 cups of charcoal will burn slow for 6-8 hours. I've never had to add more when cooking. Hope this helps!
@MrMiamiE

The Canadian Grill Sounds good! Do you add any extra wood chunks throughout the smoke? I’m 3 hours in and don’t see much smoke anymore. I added 3 big chunks of hickory initially. Temps are holding at 250* tho
@thecanadiangrill1715
@thecanadiangrill1715 4 года назад
@@MrMiamiE Initially, I use a few hickory or apple wood chunks to get it smoking. Yes, they will burn off after a few hours. I find the meat is too smoky flavored if I add more, but of course if you like it that way you can always add a few chunks here and there to keep it smoking.
