This is a delicious Chinese red roast pork that you see hanging in the windows of Chinatown, dripping with juices and ready to cut. The ingredients are simple and once you taste it, you will never need to buy this expensive meat. This recipe has been made by generations of Chinese and this is my mother's version. You can make this too!

Costco sells country style spareribs boneless which is pork shoulder sliced. A step saver. This recipe rocks on my Rec Tec pellet cooker. I put the extra marinade in a small pan and let it cook alongside the meat to prevent raw contamination. So good! Thanks for the recipe Lady of Pickles! My word. Yum!

Just wanted to tell you that this was WAY BETTER than what I get in the Chinese restaurant from which I usually buy it. I did observe that I may have cut my pork a little too thinly because it was beginning to look done before the last 15 minutes. Only problem I have had with it was I wanted to eat all of it at once! I am planning to freeze the pieces and then use them in fried rice and egg rolls.

I greatly appreciate the traditional recipe, because it replicates my grandfather's style he made at his Chinese restaurant. I almost wept when I tasted the char sui from your instructions. I cooked for years in many restaurants. Truth be told, most professional recipes are simple because of cost and ease of prep. The secrets can be spices but are also methods. Many similar recipes have 12 or more ingredients, it's very hard to keep that many flavors balanced. 2 or 4 flavors will usually overwhelm the dish and the rest will be a waste of time and money. Your recipe looks like a well-refined restaurant-style recipe. Easy and fast to repeat every couple of days. I will try yours, thanks for sharing.

@sPickleLady I tried the recipe on a pork loin. I thinned it by cutting it lengthwise first. I also used some curing salt and gave it 3 days in the fridge. It came out very well and I put your recipe in my book. I brought it to a family get-together. A char sui and a mountain of fried rice. My reputation grows Thank you. BTW I am chris 7551

Thank you for sharing your family's heritage. Char Siu and Char Siu Bao has been among my favorite dishes since I discovered them roughly 35 years ago. Not the easiest thing to find in southern Louisiana so I have made it a few times over the years. I agree most recipes have so many ingredients that it becomes more of a science experiment than a labor of love as cooking should be. I use char siu as one of the meats in making fried rice, but can't find the same char siu here in Henderson, Nevada as I did back in Hawai'i where I was born and raised. The common char siu in the restaurants and markets here use honey in their recipe and the meat is a gold/orange color. It seems they all use the same recipe here being too sweet and lacks the 'char siu' flavor. A fellow islander who lives in Summerlin sent me your video and I took notes while viewing it. I can't wait to try it as it appears to be the same as I've used before. I truly enjoyed your presentation. Mahalo!

Yes, I don't like commercial char siu, they're usually dry and not good tasting. Plus, it's super expensive, 12 to 13 dollars a pound. Mine is guaranteed delicious and I make it all the time and freeze in individual wrappings so I can take out only what I need. Get the butt on sale, .99 if you're lucky. Thanks for subscribing.

Your title caught my attention: 100 year old recipe for Char Sui~ Then when you appeared on the screen, I immediately recognized you Lenora! This is Harvey in AL. So great to see your video and to put a number of other recipes on my "to watch" list. In fact, Lana is watching your traditional Joong recipe right now! (You mentioned in the beginning the Ti Leaves growing in many Hawaii resident's backyard.
