Ingredients
For the Chicken:
4 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
Salt and pepper to taste
For the Sliders:
12 mini slider buns or Hawaiian rolls
6 slices of bacon, cooked and halved
1 ripe avocado, sliced
1 tomato, sliced
Baby arugula or spinach leaves
6 slices of Swiss cheese, halved
Mayonnaise
Dijon mustard
For the Special Sauce:
½ cup mayonnaise
2 tbsp honey mustard
1 tbsp BBQ sauce
1 tsp lemon juice
½ tsp garlic powder
Salt and pepper to taste
Instructions
Prepare the Chicken:
Preheat your grill or skillet over medium heat.
Season the chicken breasts with olive oil, smoked paprika, garlic powder, salt, and pepper.
Grill the chicken for about 5-6 minutes per side or until fully cooked and juicy.
Let the chicken rest for a few minutes and then slice into slider-sized pieces.
Prepare the Special Sauce:
In a small bowl, mix together mayonnaise, honey mustard, BBQ sauce, lemon juice, garlic powder, salt, and pepper. Set aside.
Assemble the Sliders:
Slice the slider buns in half. Spread a thin layer of mayonnaise on the bottom halves and a thin layer of Dijon mustard on the top halves.
Place a piece of grilled chicken on each bottom bun.
Add a slice of Swiss cheese on top of the chicken.
Add two halves of bacon, a couple of avocado slices, and one or two tomato slices.
Add a few leaves of baby arugula or spinach.
Drizzle some of the special sauce over the toppings.
Place the top half of the bun on each slider.
Final Touches:
If desired, you can quickly heat the assembled sliders in the oven for a couple of minutes to melt the cheese slightly.
