@@RecklessFables Every time I have gotten a cheesesteak in Philly, it has been so hit or miss. It's either pretty stinking good, or just okay, with almost no in between. And I agree with you, almost every pizza place, or burger place here in NJ does their 'Philidelphia' style cheesesteak a lot better. The whole cheese whiz thing must be an acquired taste or something that is only native to Philly.

As a former Philadelphian, I am contractually obligated to tell you that you cheesesteaked wrong and that I hope you will cheesesteak properly on a return visit. @RecklessFables There is a divide among Philadelphians as what constitutes a true cheesesteak. Most are united in the opinion that Pat's and Geno's are for the tourists and that the best steaks are to be found elsewhere.

When I was there for PAX Unplugged in 18, there was a place very near but not within Reading Market that did three things I loved A cheesesteak where the internals were 1. cheese 2. steak and 3. none of the crap everyone else likes in their cheesesteak A wide variety of cheesteak-enhancing beer Tables big enough to play magic on while enjoying a cheesesteak It was a good time. Maps is failing me on finding it but it may no longer be there, either :(

If you are making your own, whatever kind you want. I like cheddar. If you go to a shop in Philly, different places use different kinds, but Cheese Wiz is the standard kind at Geno's & Pat's (both also offer American and Provolone). Also, American cheese gets a bad rap. If you get "real" American cheese (from a deli) rather than wrapped singles, it is fine.
My dad and I went to Philly as part of a road trip once. We had asked a local Philadelphian where to go for a proper cheesesteak. They told us to go to Geno's, and it was the worst Cheesesteak I've ever had. It was cold and bland. They serve it with cheese whiz because its the only thing with flavor they have.
As a Pittsburgher I was confused by your pronunciation of Lancaster (which is probably correct actually). The way we pronounce it sounds more like spell caster Also for the record we mispronounce every single French named town in Western PA as well.
