These Cheesy Scalloped Potatoes are a hit for cheese lovers!
Cheesy Scalloped Potatoes
2 lbs petite potatoes sliced thin
1/4 onion minced
1/4 red pepper minced
1 jalapeno minced
2 garlic cloves minced
1/2 stalk Celery minced
3 mini carrots minced
4 TB butter
1 TB oil
1/4 cup flour
1 tsp paprika
1 tsp no salt seasoning
1 cup milk
1/2 cup half n half
1 cup Alpine cheese mix (gruyere and swiss)
3 Kraft singles
1/2 cup monterey jack
Preheat oven to 350. Slice potatoes and soak in a bowl of water to keep from browning.
In an oven safe saute pan on medium heat add butter and oil, once butter is melted add minced veggies.
Saute until tender. Add flour and seasonings, cook for 1 minute then add milk and half n half. Stir until slightly thickened then add cheeses, stir until melted. Add potatoes and stir to coat all potatoes. Place a lid or foil and
bake for 1 hour then take of lid/foil, raise temp to 375 and bake for additional 15 - 20 minutes.
