Ingredients:
2 lbs potatoes, thinly sliced
1 cup onions, chopped
1 cup deli ham, chopped
3 tbsp. butter
3 tbsp. all-purpose flour
3 cups milk
½ cup plain yogurt
½ cup Parmesan cheese
2 cups shredded cheddar cheese
Seasonings
Salt & pepper
Directions:
1. Thinly cut potatoes into ⅛ inch thick slices. Put in a large bowl along with the chopped onions and ham. Set aside.
2. In a large sauce pan, melt 3 tbsp. of butter over medium-low heat. Add flour and whisk until well combined. Pour in the milk and let simmer until thickened, stirring frequently. Remove from heat. Add salt, pepper, Parmesan cheese, and 1 cup of shredded cheddar cheese, and mix well.
3. Add the cheese sauce and yogurt to the potatoes. Add more salt, pepper, and other seasoning, if desired. Mix until well combined.
4. Transfer to a lined or greased 8-inch square baking dish and top with the remaining 1 cup of shredded cheddar cheese.
5. Cover with lightly greased foil at 400°F for 1 hour. Uncover and bake for an additional 20 minutes or until the potatoes are cooked through.
6. Let stand at room temperature for about 15 minutes before serving. Enjoy!
