I suspect the problem is with all of Conde Nast. Because Anna "nuclear" Wintour had an apology today. Something she is not known to do. Also I doubt Andy, Rick, and Priya weren't paid.

I truly enjoyed this so much that even when it ended i wanted more! Chef Nyesha's smile and enthusiasm is infectious. She captured what is the true essence of being in the kitchen, cooking and making something, learning and adapting. A few failures but you regroup and try again. Adapting ingredients you have to make a dish. That's the essence of cooking. But man, them Taco's were dripping with flavor bombs.

The flour tortillas look just slightly off from traditional, but I can imagine they tasted better. I bet its the bacon fat, it has more salt and flavor than usual lard

These are not Carnitas, but they do look really tasty. Carnitas take a specific process to make, you can’t cut that process out and call it Carnitas. My Pops is from Michoacan.

Don't true Carnitas have guac, thinly sliced white onions, a pico and scr? Personally, I use fat-free plain Greek yoghurt, as it is fat free, lower in salt and by far more healthy than scr... Any thoughts?

My wife uses ribs all the time, rather than shoulder or butt if the latter are not available. USE THE BONES!!!! folks can pull them out while they eat.

"Pre-preparation", in the culinary world, is called: " mis èn place. " It's getting ALL ingredients measured, all knives, bowls, pots and/or pans, potholders, clean sink: All is cleared, so when you start the recipe 'ALL is in place' for a successful dish, meal, dinner for 2 or 20. Timing is everything. If you do not have "mis en place", you get distracted, particularly when attempting a new recipe the first few times. I also subscribe to: BA, Bon Appetite, which is owned by Condè Nast, the Global Yachting magazine, and also owns several more culinary mags/institutions, etc. New York Times Cooking; Hiroyuki Terada, Diaries of a Master Sushi Chef; GR (aka, Grrrrr!), the pompous, now/recently turned dingbat with his Ramsay in 10, Gordon Ramsay; ATK, America's Test Kitchen; and have over 120 cookbooks. Love Seafood? Pike Place Market (Seattle) Cookbook. Love amazing Seattle, Mallorca (Spain), Dallas (Texas) and many more high-end ($20-$40 per plate) restaurants? The "A la" Seriea used to be located in Federal Way, WA. Top 25 restaurants in a given City. May submit recipes from a particular (TOP 25) restaurant in 3 of a few categories: Main course, salad, side dish, beverage/drink, dessert, etc. An additional requirement is that the majority of the ingredients (herbs and spices) must be available in most kitchens; but, no corners can be cut as to the results; thus, you only have to buy a few new ingredients, herbs, spices, etc. Seattle? The famous Duke's Chowder House? Their World-reknowned Clam Chowder AND their Crab Cakes. Off-the-charts yummy. I was weaned on seafood, and my dad has been authored for recipes in newspapers around the Pacific NW for many years. Family joke? Dad, why do you have 5 boats? Answer? Because I sold one. True story. 🤗 Have several of "The Beautiful" series, which are hardback, around $100 per, coffee-table style. They have an amazing assortment of recipes, but are so rich in not only the recipes but the Culture of the people, their primary source of food, be it goat, poultry, beef, seafood, alligator (which I have had, as well as squirrel, frog legs, possum and armadillo, etc. - none of which "tastes like chicken"!), or other types. Anyway, Bon Appetite! Find a recipe that sounds good? Don't like a certain ingredient or two? Make it anyway, but make it your own. I believe that I am the only momma on the planet that, though I tried for many years and dozens of recipes to get him to like it... he, to this day, refuses to eat macaroni and cheese... Whoodathunkit, right? Stay home! Stay alive! C19 has now mutated to over 300 varieties. 2 weeks ago, the USA hit the 100,000 DEATH MARK. We just hit 110,000 - IN TWO WEEKS, up by 10,000. Nothing to do with carnitas, first mistake the “dry rub”. No one in a million years will cover pork with a rub to make carnitas.
