That's just beautiful, Stephen, so happy to hear that you guys are enjoying wonderful food and of course Gaz is the go-to guy for vegan chefdom supreme! Just wanted to share something that vegans feel is very important. When people are eating plant-based because of the animals that's actually referred to as vegan. If one is eating a plantsonly diet for health or for the environment's sake mainly, that's being on a plant-based diet or being a plant-based eater. There are people who really aren't doing it with the animals in mind although we find that this almost always comes in time. Don't know what your situation is ~although you've mentioned your health gains which is such a blessing and pretty much a guarantee with a truly healthy diet of plants~~but it really doesn't matter because it all spares the animals in the same way! Outstanding. And not extravagant. I would say educational! You are a classically trained chef! If I wanted to watch a RU-vidr slap together some butternut squash soup and a kale salad or another chickpea tuna salad, there are so many channels for that. You, chef, are unique! Keep educating us extravagantly!
Spicy homemade potato wedges dipped in humus is also delicious. Same principle as the humus mash but less washing up on lazy days. Aubergines look delicious.
OMG that grill is fire 🔥 when I was in Morocco I had a lot of harissa I could never make my mash ordinary I always add my twist to it this rendition looks scrumptious this a dream of mine to have my garden and professional kitchen lovely cooking outside issa my kinda vibe & essence

@@jxeh1442 Because I was brought up eating meat, my family have always ate meat as have many people for many centuries. Do you not think the fact I’m watching these sorts of videos though is an indication that I’m trying to wean myself off?
@@veronicacanaveira1068 that’s not a moral justification, that’s a social one. Think about the answer from a moral perspective and you won’t need to wean, you will be vegan overnight.
I just got some spring onion like those at the farmers market this morning. If I'd known about this recipe I would have gotten king oyster mushroom too. I'll be cooking spring onion with yellow summer squash. Again thanks for sharing these yummy dishes.

I have made harissa roasted aubergines only once and it was quite some time ago so I am definitely making this soon - perfect dish for the summer as from the grill they must be even better!

Keep an eye out for worms in many mushrooms. Apparently King Oyster and Oyster mushrooms have worms sometimes..."Fungus gnats will burrow into the caps of your kings and lay eggs in the stems. The result is a number of worms and maggots in your mushrooms, making them completely unappealing. You can avoid this by harvesting your mushrooms early, and always check the stems for worms."

I've watched this video about 6-7 times today, twice because I was distracted.😂 I love your cooking technique and details. I love your garden and the fact that you're cooking outdoors. Most of all, I love cooking with eggplant, if done right no one will even know that it's an eggplant. depending on the recipe. It is one of the best versatile vegetables there is to eat.
