CHESTNUT LATTE, that's how we have named this hot and autumnal drink that tastes tremendously delicious. We buy chestnuts at @sweetparadise_vegan, a vegan cafe in Tenerife. They are not just any chestnuts, they are solidarity because they are collected in the animal sanctuary @fincaarkadia with a lot of love and everything that is collected from their sale goes directly to help its inhabitants. And going back to the #vegan recipe, here is the step by step of this very special # castañalatte:
CHESTNUT LATTE (2 lattes, although the cream makes for 10)
Total processing time: 50 minutes
INGREDIENTS:
- 500 g of chestnuts
- 200 ml of water
- 150 ml of agave syrup
- 1 Teaspoon vanilla extract
- 6 tablespoons of coffee
- 500 ml of oat or soy milk (they are the best foam)
· We will start by stewing the chestnuts. To be able to peel them well, make two cross cuts on one side before cooking them.
· Let them boil for 10 minutes so that they cook well.
· Drain and wash.
· Let stand until no smoke comes out so that you can peel them without burning yourself.
· Remove the skin with a knife or cut them in half and scoop out the chestnut with a spoon.
· The final amount of peeled chestnuts that we had was 350 g, which are what we will use to make the chestnut cream.
· Place them in a tall pitcher to blend and add the water, agave and vanilla.
· Blend until you have a cream.
· Heat it over medium heat in a saucepan while stirring.
· When it boils, reduce the heat to low and cook for 20 minutes, stirring from time to time.
· Let this cream rest in a glass container.
· Make coffee and heat the vegetable milk.
· You are going to serve at the bottom of each cup 3 tablespoons of the chestnut cream, and compact it at the bottom.
· Pour in the milk, but leave half a finger on top.
· Add 3 tablespoons of coffee. All these quantities are to our liking, if you want more sweetness add more chestnut cream and if you don't want coffee you can omit it.
· On top we are going to froth it, which is as easy as pouring the rest of the vegetable milk with electric rods.
· A touch of final cinnamon and that's it.
