Chetna Makan returns to share her recipe for flaky lachha paratha brushed with savory garlic butter. She demonstrates two of her favorite ways to roll up the flatbread for crispy yet tender layers. This simple dish is super easy to make but packs a ton of flavor from the carom seeds and garlic.

INGREDIENTS
150 grams (1 cup) chapati (atta) flour
150 grams (1¼ cups) all-purpose flour, plus more for rolling out dough
1 tablespoon sunflower oil, plus more for finishing dough and toasting
1 teaspoon table or fine sea salt
1 teaspoon carom seeds (ajwain)
150 milliliters (2/3 cups) water
100 grams (7 tablespoons) salted butter, melted
5 garlic cloves, grated

Huzzah! Paratha! Garlic-peeling tip: soak the cloves in a bit of hot water, just enough to cover, for a few minutes. The peel comes right off and the cloves are whole and easy to use whichever way you want

Does your flour mixing bowl have a special name? I don't like kneading in round-bottom bowls and the large flat base with low walls would be amazing to have.

I guess in Western countries butter is more easily accessible. In India we always make it with ghee.
