Cilantro-Mint Chutney
1 1/2 cups firmly packed (50 grams) fresh cilantro leaves
1/2 cup firmly packed (25 grams) fresh mint leaves
2 bird’s-eye green, Thai, or Scotch bonnet chiles
3 tablespoons lemon juice (from 1 large lemon)
1/2 teaspoon granulated sugar
1/2 teaspoon sea salt
Palmiers
All-purpose flour, for dusting
1 sheet packaged puff pastry (between 8 and 12 ounces), thawed but still cold
1 cup (100 grams) extra-sharp white cheddar cheese, coarsely grated
1 large egg, lightly beaten
