Chewy Salted Caramel
1 cup whipping cream
¼ cup salted butter
¼ tsp salt
¼ cup water
¼ cup light corn syrup
1½ cups sugar
1 tsp vanilla extract
1 tbsp liqueur (optional)
Salt for garnish (Fleur de sel, coarse sea salt or pink Himalayan salt all work well)
Start by lining a small baking dish (8x8) with parchment paper, being sure to leave excess on all sides.
Lightly oil parchment paper to prevent the caramel from sticking.
In a small saucepan, heat the cream, butter and salt just until the butter has melted.
Turn off heat and set aside.
In a large saucepan, gently stir together the water, corn syrup and sugar.
Try to avoid getting any sugar crystals on the sides of the pan while stirring. If you do get sugar crystals on the sides of the pan, brush them down with a damp pastry brush.
Place the candy thermometer in saucepan. It is critical to use a candy thermometer when making caramel as you're working with very specific temperatures. They're widely available and fairly inexpensive.
Heat your saucepan to medium-high. Once the sauce pan is on the heat, do NOT stir the mixture.
After a minute or so, you'll start to see bubbles form around the edges and then push into the centre.
When your candy thermometer reaches 300˚F, turn off the heat and CAREFULLY whisk in the cream mixture. The mixture will bubble and rise so use extreme caution while whisking.
Once the mixture is combined, turn the heat on to medium. Do NOT stir.
Your caramel is ready when the thermometer reads between 245˚F and 250˚F.
Turn off the heat and quickly stir in your vanilla extract and liqueur (if you choose). Be sure not to scrape the bottom of the pan because burned bits may have formed and will end up in your finished product.
Pour the mixture into your prepared pan and tap it on the counter a few times to release any air bubbles.
Allow the caramel to set for 20-30 minutes before topping with salt.
Allow the caramel to set for at least 2 hours before cutting it into to pieces.
Wrap caramel bites individually with wax paper and store in the refrigerator for up to one week.

I made these but took it up a notch and dipped them in chocolate and then added the salt. Holy little bites of heaven. They did not last long on my table :)

+Jill Barthen Berke I just used both dark and milk to dip them in. I don't like milk chocolate and my family doesn't like dark so I thought it would be nice to have a couple choices. I will say even though my family hates dark chocolate, they are the majority of those as well. I also made sure to temper it.

My grandpa was famous in our family for making caramels for everyone each Christmas. They were the BEST! But sadly he passed away very unexpectedly, before he could teach me how to make them. Your end result looks very similar to his and I'm excited to try this and see if I can replicate one our favourite parts about Christmas

I’ve made these caramels several times already and it never fails! It is THE MOST DELICIOUS caramel i’ve ever had! Thank you for sharing this. To everyone who says their caramel didnt set or it was too soft. I followed the cooking steps to a T, but i doubled the ingredients, using half brown sugar and half white sugar, the color came out beautiful, just like the video! So those who say their caramel didnt set well, you have to let it reach 300• the first time , then add the cream/butter and i let mine go all the way to 250, BUT NOT ANY MORE THEN THAT because the second batch i did today, i let it go JUST above 250 and they are hard candies 😭 still delicious, but the recipe time WAS PERFECT!!! thanks again for sharing.

Hi The Domestic Geek, I've tried 4 different caramel chews recipe and failed all 4 times. I stopped trying after a month. +Mrhotdogwinner1 Although one problem, when my batch reaches 245º after I've added the cream mixture, it' still a light light brown, not very much a caramel color, although it still tastes very good.

Because you added the corn syrup, the different sugars actually prevent any chance of crystallisation. Meaning you can shake and mix the sugar without any worries of it spoiling (steaming with a lid on for a few minutes will also pull any sugar off the side). Also you are awesome and I love you.

I don't know why so many people make a fuss about making any kind of caramel... Because everybody always is like that, I watched about 15 videos about making caramel sauce and everybody did it differently to the person before. I just heated my sugar and at some point I put in some butter and cream and that was the most perfect caramel sauce ever!😍

These turned out fantastically! Note of caution: if doing a double batch, a saucepan that size BARELY holds it, so be careful. Also, I used coarse sea salt and found it better to only wait about 15 mins after pouring it into the pan...otherwise it didn't adhere very well. Thanks for the awesome recipe!

This recipe worked out great on the first attempt, tastes great and looks amazing. Really take her advice on not scrapping the bottom of the pan. I did that and ended up with half hard caramel and half soft caramel candy. The mess up was totally on my part though.

I doubled the recipe to make thicker caramels and I added some vanilla beans to it. Came out perfectly. Solid on the outside but when you bite into it delicious and chewy. Awesome recipe!!!!

I made this today and it was un-believeably salty! On the verge of unpalatable... However I was using fancy sea salt crystals that are notoriously VERY extremely flavoured... If you're using proper sea salt, I would suggest using maybe 1/8 a cup, or playing it by ear and just adding a few teaspoons as you desire.

I make caramels all the time and they are so good. The only problem is the time and trouble it takes to make them and then having to wrap each little piece of caramel can be a pain in the butt. But like she said, it's a labor of love if you love caramel.

I made these yesterday and they turned out delicious! Will definitely be making this recipe again. I didn't have anything but a very fine sea salt, so I sprinkled mine with kosher salt (it's flaked) and they were beautiful. The salt adds a nice texture and taste. I cut mine into long skinny pieces. I cooked the candy to a temperature around 255 degrees because I wanted them a little chewier. Was really happy with how they turned out. Next time I will grease the ever loving heck out of the parchment paper that I used to line the pan. I did grease mine lightly this time but I will use more next time because these caramels stuck to a few spots on the paper. (Don't be stingy in buttering the parchment!) I'd love to try these with different candy flavorings added, like black licorice or coffee.

Cheesier as in like harder? I only heated mine to 240 because the first time I did it it was to hard. When I think of chewy I think of soft. But 240 gave a really nice texture. Everyone I gave it to LOVED it.

+Grace T Chewier like firmer, but not brittle. I think store bought caramels are too soft. These kind of stood up to my teeth when I first put them in my mouth, but softened and were lovely and sweet.
