How a pastry chef makes CARAMEL | Easy & Foolproof

Caramel is used everywhere in desserts and there are many different recipes but the idea is the same: Melt sugar then add fresh cream. It's all about getting the timing right to get the perfect caramel and in this video I will show you how to nail that.
★Ingredients★
Sugar 100g
Heavy Cream 100g
Butter 30g
★Steps★
1. Add sugar into a large sauce pan.
2. Heat on medium-high heat while whisking/stirring the sugar.
3. When the sugar melts and turns brown in colour you will soon reach a point when bubbles are created (check out the video for details)
4. Gradually pour the hot heavy cream(80°C+) into the caramel and whisk until incorporated.
5. Add in butter and whisk.

Hi! I’m Hanbit, professional pastry chef and CEO of Sugar Lane Baking Academy based in Seoul, Korea. Funny enough, my background had nothing to do with baking - far from it. I studied mathematics at university and then worked in finance, strategy consulting and IT. Then one day in 2018, I quit my job and enrolled at a pastry school. I have loved it ever since!
As my story suggests, I really enjoy being a pastry chef and I am keen to share the joy of baking with as many people as possible. Baking can seem daunting at first but as long as you take it step-by-step anyone can do it - even someone with no baking background like myself managed to become a professional pastry chef!
I'll try my best to include detailed explanations and tips in my recipes so that you will be able to bake amazing desserts. I aim to create videos that can be enjoyed by people at all levels - those who bake for fun as well as those who want to get more serious.

I love your story how you became a pastry chef! It must not feel like "work" everyday now.:) Still, we will never waste what we have learned. Going over the Stage(s) of colour of the sugar when heating/melting, would have been a bit helpful. Should the butter be added cold as one would when finishing a savoury sauce? By chance, do you see what I mean?

I know this is old at this point but some tips. Mention heat of the butter and cream, they should be just above room temp. A lot of people overheat dairy. Get the camera closer. I know what you mean by small bubbles. They dont.

you don't really reheat caramel - i just leave it outside so it becomes a bit runny. But I guess you can microwave it slightly to reheat it?

@@HanbitCho the caramel is preserved in chiller so I always have caramel ready whenever needed, and the caramel is not at pourable consistency because it hardens in fridge, but I guess microwave is the answer, thanks!

Hmm, I usually make caramel with butter added right at the end. If you boil sugar and butter together I think that's butterscotch - not quite sure.

My sugar started to crystalize while melting, and it caught on the side of the pan and spoon and harden. Maybe I'll try the wet method.

looked and smelled great, but it tasted bitter and shitty. had to throw it out unfortunately. i'll try again. pretty bummed because i have been nervous about trying this since i don't want to waste the ingredients but what can you do. it costs to learn unfortunately

You should really look at the colour - it's even more difficult to accurately measure the temperature of melted sugar.

When it comes to the caramel sauce recipe. It's usually a trial and error at first , then you figure out when based on look. Temps are really used for the candies for a few different reasons.

@@christina1796 maybe you late stiring your melted sugar. So you cant late stiring the sugar when the sugar just start to melt. If you late the melted burn sugar in the bottom will affecting your non melted sugar. Before watching this channel I used to hate making dry caramel i like to make wet caramel instead. But not after watching this video. Thank you so much

This is very helpful! I do wonder if the heavy cream and sugar ratio also depends on the ‘end product’ of what type of caramel you want. Like fudge, caramel sauce, caramel that’s as thick as dulce de leche etc.

Hi!!! Till which temperature do you recommend cooking the caramel? I mean, sometimes I get a hard toffee, but i want a fluid consistence, for filling. 105 or 118 Celsius? Thank you!! Sorry my vas english :)

Hi! Well, the fluidity of the caramel is decided by the ratio of sugar vs. heavy cream rather than the temperature. If you have a higher proportion of heavy cream, the more fluid your caramel would be.

Thank you, Hanbit! I was really struggling to consistently make caramel. Many recipes say not to stir or touch the caramel much or to wipe sides of pan with a wet pastry brush. That never worked for me. Follow Hanbit and stir your way to caramel success!
