Chhana'r payesh-a dessert made by first curdling milk, and then briefly cooking the resultant cottage cheese in more milk-is possibly the easiest among the myriads of payesh that Bengalis make. If you have all the ingredients, and you most likely do-it's just milk, sugar, and nuts-it only takes 40 minutes to cook from start to finish. Once chilled in the fridge, chhanar payesh is a crowd-pleasing dish for summer get-togethers, or to take to a potluck when you haven't got the time to make something elaborate.

I made this recipe recently it turned out really good but I missed out one thing, the thick texture next morning, I had reduced the milk well too but after keeping it overnight in refrigeration, it stayed watery 😢 It tastes great but I hope to get the consistency right next time, can you please guide me where I may have missed something?

I tried this recipe. Two things went wrong. The consistency of the milk. It was a little watery. Secondly i used 2 elaichi but i couldn't taste it in the final product. I feel we coarse grind elaichi and put into the milk it will release more flavours. ( I have not added rose water) What do you think?

PS Once I put jaggery in hot milk when making kheer and it split. My mother said that sometimes jaggery contains salt and you put that in boiling milk hence the disaster.
