This video will show you how to make Chicken Ala King.
I would say this is the best I've ever had because I used all fresh ingredients and lots of veggies.

CHICKEN ALA KING
INGREDIENTS
1 stick Butter
3 Cups onion chopped
1 cup celery chopped
8 toes garlic minced
8 Ounces white button mushrooms quartered
1 ½ cups Carrots chopped
4-5 cups poached chicken breast or thigh meat
2 cups frozen peas
8 Tbsp. All-purpose flour
4-5 Cups Chicken Stock
1 Cup white wine (Chardonnay)
2 Cups Half and Half
2 Tbsp. Poultry Seasoning
Salt and Pepper to Taste
INSTRUCTIONS
In a large skillet with high sides, melt a stick of butter.
Add in the onions, garlic, carrots and celery.
Sauté for 3-4 minutes on a medium high heat to soften.
Add mushrooms and sauté for an additional 3 minutes.
Sprinkle on the all-purpose flour and stir the flour into the veggies until no more flour is visible.
Stir in 4 cups of half and half. The mixture will be thick and creamy.
Add in chicken stock to thin the sauce until the sauce is at your desired thickness.
Season with poultry seasoning, salt and pepper.
Finally add in the frozen peas and chicken.
Stir and adjust thickness one last time by adding chicken stock.
Serve over puff pastry, toast bread or even some wide egg noodles.
You can even serve it just as it is.
POACHED CHICKEN AND USING THE STOCK
Add 3-4 quarts of water to a stock pot. Add in one onion chopped along with a tablespoon of poultry seasoning and a few bay leaves. Bring to a boil.
Add in three chicken breasts and two thighs in boiling water for 25 minutes.
Remove the chicken thighs and breasts and allow them to cool.
Cut the breasts into small chunks.
Remove the bones from the thigh and cut the meat into chunks.
Strain and reserve the chicken stock.
Chef's Notes:
Use any popular brand of Poultry seasoning.
You can boil the chicken breasts for 45 minutes. They will be very tender but they may shred.
Steam the carrots or sauté the carrots to soften first before adding the rest of the veggies if you are afraid they won't be soft enough.
